Breakfast (Continued)

Pancakes

Mini pancakes served with berries and other fruits, for breakfast,  what a great way to start the day.  The batter is straightforward to make, and the cooking is fast, no one will be disappointed for doing it.  To serve the pancakes, hot or room temperature, for an extra treat- drizzle them with honey, yoghurt and other fruits.


I use self-rising flour, some recipes use plain flour but added some bicarbonate of soda, and also buttermilk to make the pancake moist. 
 In my recipe the batter is thick (spoon drop consistency), the pancake is puffed and light.


Basic Mini Pancakes
1 cup self-rising flour
1 egg
1/4 cup vegetable oil/margarine
1/2 cup milk and 1 tablespoon sour cream
Mix all ingredients together to make a smooth but thick batter, rest it for 25 minutes

Fruit to add: blueberries, apricot and bananas
The Pancake Batter

Method
Heat a heavy based fry pan
Spray or add some margarine
Spoon the batter, put in the hot pan.  Do three or four at a time
Put the fresh fruits that you like
When the pancake starts puffing up with bubbles, turn them over
Cook for 2 minutes over low heat, to make sure that they don't burn
Take them out and put on a plate.
To serve: individually, or all on a large platter, drizzle with honey, yoghurt
and add fresh fruits, berries etc.
