Cherries

Red Beautiful Cherries


Red cherry is in season now.  Here are a few suggestions on how to make the best of the cherries. I cooked cherry clafoutis, it was delicious, thanks to the farmers market.  Today I got some more from the Traralgon Market. I am planning to make red cabbage salad with cherries and also to use them as a garnish for a  meringue platter.

Cherries Jubilee is a sweet dessert dish made with cherries and liqueur - Kirsch, which is then flambeed and commonly served as a sauce over vanilla ice cream
The recipe is credited to Auguste Escoffier who prepared the dish for Queen Victoria's  Jubilee celebration.

If you don't have -Kirsch, Brandy or Cognac can be the substitute.

Cherrie Jubilee by Auguste Escoffier

Syrup: 450 sugar, 600 ml water
Place the sugar and water in a pan, bring to the boil and skim.  Allow to cool, use as required.

450 g large cherries
300 ml syrup
1/2 tablespoon arrowroot
2 tablespoons Kirsch

Poach the cherries in sugar syrup, then remove and place them in 4 deep individual serving dishes. Reduce the syrup and thicken with the arrowroot, dilute it in a little water.
Coat the cherries with the thickened syrup, pour 1/2 tablespoon warmed Kirsch into each dish and set it alight just as you bring them to the table.

It is impressive also theatrical to serve to your guest.  An excellent idea for a Christmas dessert.
Have fun to try this recipe, I think it simple enough.
Other desserts that are excellent with cherries: topping for pavlova, black forest cake, cherry platter and many many more.

Recipe:

Red Cabbage Salad with Cherries
2 cups shredded red cabbage
12 fresh cherries,  pitted
Fresh lovage and dills
Dressing:
2 tablespoons  best quality olive oil
2 tablespoons red wine vinegar
1/4 teaspoon salt
Place the ingredients in a bowl, mix them thoroughly
The Salad
Put the cabbage, cherries, and chopped lovage, add in the dressing and toss them together gently
Transfer on a serving bowl and garnish with the dills.
A Refreshing and a perfect salad to go with pork or ham.


Meringue and Cherry Platter.  I baked the mini meringues a month ago, and this is what I do with them together with the cherries.  Place and arrange the meringues in a platter with the fresh cherries, pitted and unpitted, dust with icing sugar liberally.

Red cherry is a festive fruit with vibrant red colour.  I am glad that we have the cherries at this time of the year.

  1. I was inspired and baked an apricot clafoutis but the batter was a bit stodgy and strange. a) I'm not a baker and b) I used an untried internet recipe!

    Use my recipe the cherry clafoutis. It is under farmers' market post.

    Remember you have to rest the batter for a least 10 minutes.
