Cooking with Fish

Fish curry is quick and easy to cook, use firm and white fish such as Ling or Cod.  Today is Friday, and I love to cook fish for the family.  No, I won't cook the curry, but I will cook capsicums stuffed with fish, and pan-fried fish with herbs.

I cooked two delicious fish dishes in no time.

Ling fish cooked two ways.
Red capsicum stuffed with spiced diced Ling.
Pan-fried Ling with herbs and couscous.

Spices for the fish: turmeric, red onion and chilli
Sauté the spiced fish,  in oil for 2 minutes, do not overcook.

Herbs for the pan-fried: shredded mints, lemon rind and lemon juice

Use fresh red capsicum. Cut one into two, clean and discard the seeds.  Place the cut capsicums in a pot and cook in oil for a few minutes, turn them over, now you could see the blackish colour of the skin, continue cooking for two minutes.  Take the pot off the stove, but keep the capsicums on it and cover, until serving time.

Before serving, take two spoons of cooked fish to stuff the capsicums
then place the other half for the lids
Stuffed capsicum is ready to serve

To cook the pan-fried fish, first flour the fish then dip into a light herbs batter, fry in hot shallow oil.  Cook about two minutes on each side, take them out and drain on absorbent paper.

I served the fish with couscous and garnished with the stuffed red capsicums, add some fresh chopped herb.


Friday is the day that we want to be practical in the kitchen after a busy week.  Well if you stay in, you can quickly cook these fish dishes for the family.  Happy cooking and enjoy.
