Sweet Potatoes

Sweet  Potatoes    for    Cake   and   Garnishes


Sweet potato is a tuberous root, it is different from ordinary potato.  The leaves and shoots of sweet potatoes are also edible.  I am keen about sweet potato as it is very versatile in cooking.  You can make savouries and delicious dishes. The savouries are sweet potato cheese bread, sweet potato soups, curries etc. and for the sweets are cakes, muffins and scones etc.

I use a sweet potato to garnish meat, fish, and chicken dishes and also for baking cakes, scones and for soup.   I have learnt that the sweet potato is very nutritious, so I encourage the family to have more of in their diet.  It Is Good For You!!!!!

Sweet Potato is one of the healthiest vegetables. It contains vitamin A, C, and a good source of dietary fibre, and also vitamin B6 potassium.
I am sharing what I do with these tuberous roots.   My own recipes:   Sweet Potato Cake, Candied Sweet Potato, Diced / Steamed also Baked sweet potatoes strips for garnishes.

Susy’s  Sweet  Potato Ring Cake

Ingredients:
Dry ingredients
3 cups self-rising flour
1 teaspoon bicarbonate of soda
2/3cup caster sugar
180 chock chips

Wet ingredients

3 eggs (50 g)
Sweet Potatoes pure 175 gr, mix with 1cup sugar
180g raisins and soak in a half - cup hot water let it cool
½ cup yoghurt
½ cup oil and 3 tablespoons melted butter or margarine

Method

Put the oven to 160 degree Celsius
Buttered 2 tins (ring shape)
Mix the dry ingredients together; keep aside

The wet ingredients:
In a large mixing bowl, beat the eggs lightly, add all the rest of the wet ingredients; mix thoroughly

The cake mixture:
Add in the dry ingredients-mix to the wet ingredients, fold them gently to combine
Spoon on to the prepared tin, two thirds full, and level them
Bake in the ready oven for 35 –37 minutes or until an inserted comes out clean.
Leave in the tins for ten minutes before transferring onto a more cooling rack
Dress with chocolate ganache and candied sweet potato or dust with icing powder
To serve:  slice and serve with coffee or tea

The Preparation and The Cooking
75 gr Julienne Sweet Potatoes



3.  cooking the julienne potato mixture
in
three minutes to simmer
1.  75 gr julienne sweet potato add in
t tablespoon lemon juice,
1 tablespoon water and 150g sugar

 






2.  Julienne potato mixture after
less than one hour
4.  Julienne candied sweet potato
after ten minutes of cooking














Cut sweet potatoes into strips, rub with oil or butter then bake them in a hot oven to garnish braising meat, fried fish.  What you need is to have a salad to go with the dish.

Peel and Dice sweet potato, steam them until soft.  Add and mix with butter or cooking oil to garnish grilled or roasted meat.

The candied sweet potato is perfect for the garnish of my cake; Susy Sweet Potato Cake.  The cake is better for the next day after baking,  it becomes moister.  Keep well for a few days in an airtight container.

I am planning to bake sweet potato muffins, I hope it will turn out well, then I could garnish the cupcakes with the candied sweet potato, and roasted almond flakes as well.
