Ricotta Cakes

Petite Ricotta Cakes


When my children were studying in Melbourne,  they often invited us for coffee, and they took us to  Cafes.  This little cake was one of the treats that we had in the Cafe Laurent at little Collins Melbourne.
The Cafe offers a lot of beautiful little cakes, chocolate cakes, tarts, gateaux, light pastries and brioches.  But the small baked cheesecakes varieties are the winners to me.  I enjoyed the small cheesecake.
To reminisce the good times, I baked the small ricotta cake.

Recipe:

Petite Ricotta Cakes

Ingredients
150g full cream ricotta
1 tablespoon heap whole, self-rising flour
2 tablespoons caster sugar
2 eggs (50g)
1 tablespoon fresh lemon juice
1 tablespoon chopped glace orange
1 tablespoon brandy
Method
Preheat the oven up to 175 degrees C
Buttered a small muffin tin
Mix the brandy to the glace orange
Place the rest of the ingredients in a food processor, add in the glace orange mix
Work the processor, process the ingredients until smooth
Spoon onto the prepared muffin tin, fill up almost to the top, smooth them to level
Bake in the preheated oven for 18-22 minutes until golden
Cool in the tin
Petite Ricotta Cake. Soft and Sweet

To serve
Place them on a serving plate.  Dust with icing sugar.
Serve with coffee.  You can drizzle with honey mix with brandy before serving if you wish.
