Potted Strawberry to Strawberries

Strawberry Shortcake

I have been growing strawberries for the past few years, but I never get a decent harvest.  From potted fruits to strawberry patches, I have, I do look after them very well.  I water them, fertiliser regularly and also putting enough mulch to keep the soil moist. In return I have a few strawberries to pick, most of the time they never get into the table.  This time last week I saved enough berries to make some jam and to decorate a cake.  I baked strawberry shortcake for an afternoon tea.  Very enjoyable and so delightful.  We loved it.
Recipe to share is the strawberry shortcake.

Freshly Picked Strawberries


Strawberry Shortcake


Ingredients
125 g self- rising flour
2 tablespoons sugar
40 g unsalted butter
1 egg
Pinch of salt
Strawberries 16-for the shortcake

Quick fresh strawberry jam

10 strawberries chopped add 2tb spoonfuls sugar and ¼ juice of a lemon

Cook in a microwave oven for 66 seconds, take it out and stir
Put it back into the microwave and cook for 16 seconds further, take it out, stir!
Leave it cold at room temperature. It made about two tablespoons luscious jam
This jam has a very bright fresh red colour. 

The whipped cream
100ml, cream
1tablespoon pure icing sugar
½ teaspoon pure vanilla essence
Place the cream, sugar and vanilla extract, stir and mix
Refrigerate for a few minutes (5-10); then whip the mixture into soft peak cream

Method

The shortcake

Place the flour, sugar and butter in a food processor, process until the mixture resembles breadcrumbs
Add in the whole egg, and the salt, process it quickly to form a ball
Take it out, place it on a floured board, knead and roll it gently, to create a round flat dough –2 cm thickness
Place this shortcake dough on a prepared baking tray. 
Use your fingers; make a shallow indentation on top of the dough to keep the top flat in the middle.
Bake in the preheated oven at the 175-degree oven, for 13 minutes until it looks golden.
Cool on a cooking tray.  When it is cold, split the shortcake into two.

To assemble the strawberry shortcake
Place the bottom base on a plate, spread the luscious jam on it, add the whipped cream, and spread evenly
Place halved strawberries around then place the other half shortcake on top.
Put some jam on the top and spread it over the surface, then add some more cream and spread it nicely.
Top it up with some strawberries to decorate.
