Simple Soup

Vegetable Soup

Today I cooked vegetable soup for dinner, I thought the weather was good for it.  It is straightforward and easy.  I used all fresh vegetables and some meat broth that I have.  Very light but enjoyable.  I served the soup in two different ways.  One is the soup as it is, but I put fresh greens.  Number two, I pureed the soup until smooth, that is vegetable soup puree. My family loved it.

Vegetables Soup




Ingredients:
3 celery stalks, cleaned and chopped
2 medium carrots, peeled and diced
1 large onion, peeled and chopped
2 pieces lean bacon, chopped
Some of the meat from the broth (pork or others)
2littres meat broth
2 medium potatoes, peeled and diced
A bouquet garni (rosemary, thyme and sage)
White pepper, salt to taste



Method

Place the broth in a pot, add in the bacon, the meat, celery, carrots and onion
Cook over medium heat and bring to simmer.
When it is simmering, add in the potato and the bouquet garni
Add some salt and pepper, cook rapidly for ten minutes.
Now, lower the heat and put the lid to cover the pot
Cook gently for about 2 hours, this way the soup will be flavoursome
Before serving, you can add extra green vegetables and drizzle with olive oil

 To serve:
Serve as it is: ladle some soup into a serving bowl garnished with bread

Put some soup in a large bowl; using an electric blender, blend it until smooth
Ladle the soup in a serving soup bowl, garnished with bread
