Vegan - Veganism

Veganism is the practice of eliminating the use by human beings of non-human animal products. (Wikipedia)
Vegan refers to either a person who follows this way of eating, or the diet itself.

Well-planned vegan diets have been found to offer protection against obesity, heart and renal diseases, cancer, and rheumatoid arthritis. But poorly planned vegan diets can be deficient in Vitamin B12, iron, vitamin D, calcium, iodine, and omega-3 fatty acids. (Wikipedia)

I am not a vegan, but after reading the information above, I am encouraged to have vegan diets sometimes. I have a few dishes that fit into the categories.  One of them is tofu.  Tofu is based on soybeans, and it is very healthy and also versatile.

Tahu Bacem-Double Cooked Tofu
Javanese  Cooking

Shallow Frying The Tofu
(after finished braising)

The Tofu is Served with Steamed Rice, a Salad and walnuts




Tahu Bacem – Double Cooked Tofu

(Braise and Shallow Fry)

Ingredients:
500g firm tofu
50g palm sugar
1teaspoon salt
1 small onion, diced
1clove garlic, crushed
1 small slice of galangal
1 salam leaf
1 juice of a lemon
1 cup water
½ cup vegetable oil for frying

Method

Cut the tofu into 12 large cubes
Place in a deep saucepan, add in the ingredients, and accept the oil
Cook, bring to a boil than reduce to a gentle simmer,
Finished cooking when there are no longer any liquids left
Keep a side to cool.
Shallow fry the tofu with oil, cook until dark brown.

To serve: serve tofu to garnish steamed rice with a salad.
