Fish For Friday

Simple but Scrumptious.  Easy to prepare, home style of cooking fish. I use Barramundi for this dish, but other white fish is as good.  Deep fried fish in batter-based on Javanese cooking.

Recipe


Deep Fried Spiced Fish in Batter




Ingredients


2 fillets white fish, Barramundi or other

(100g each)

The Batter:
1/4cup self-rising flour
1/4cup plain flour
1/2cup cold water
Salt and spices:
-         Chili, garlic, crushed,
-         Chives, chopped, galangal powder
-         ¼ teaspoon salt

2 cups of oil for frying
2 cups shredded lettuce



Method

The batter

In a bowl, place the salt and flour, stir in the water, mix and stir it well
Let the batter rest for a while
In another bowl place the fish, add in all the spices ingredients and toss together

To fry
Put the oil in a deep fryer; heat it up until hot but not smoking
Dip the spiced fish into the batter; fry them in hot oil until golden
Take the fish out when they are cooked and rest them on top of the lettuce.


To Serve: serve hot with the steamed rice and eggplant puree with chilli



Eggplant Pure


            1 baked eggplant
            Skinned and pure with a food processor
            Add in chopped fresh chilli, salt and oil, mix to combine

The texture and the taste of Barramundi are similar to 'Ikan Gurameh' (verity of fish is found in Java)
