Quick Bread or Muffin

Today is another baking day.  I baked chocolate cake, even though it is not my recipe, I am always very excited about the result.  It looks great,   I hope it tastes delicious. 

I decided to bake mini quick bread, they worked out beautifully.  Have it for breakfast, heat it up and served with poached egg.  Or cut in half then buttered serve with mix green salad with olives.

Lined Large Muffin Tins and The Bread Mixture

                                               
Baked Quick Bread/Savoury Muffins

(very very easy to do)

Quick Bread with Feta



Ingredients

11/2cup self-rising flour
1 cup cooked grated zucchini
¼ cup oil
1 egg
1tablespoon sour cream
35 g tasty cheese
165g Feta cheese
Salt to taste

Method

Preheat the oven to 200 degree C
Mix the entire ingredients together, until combined
Lined 6 large muffin tins with baking paper
Divide the bread mixture to 6  (135 g x 6)
Put into the prepared lined tins
Bake in preheated oven for 20-25 minutes, until cooked

To serve: Buttered with mixed salads.
