Sauces - Dippings

Sauces in Asian cooking

Chilli sauce, plum sauce and soy dipping sauce are served with Asian savouries and meat dishes.  Plum and chilli sauces are excellent to help with spring rolls, and plum sauce goes with pork or chicken dishes as well. The soy dipping sauce goes with steamed dumplings, lumpia Basah (vegetables/meat rolls wrapped in pancakes) and also cooked fish dishes.

Spring Rolls Served with Hot Chilli Sauce

 

Very Hot Chilli Sauce

Chili Sauce


Ingredients
1-cup fresh chillies, crushed
Or 1-tablespoon hot chilli powder
5 garlic, crushed
2 tablespoons, crushed tomatoes from a tin
2 tablespoons vegetable oil
1 tablespoon tomato paste
1-cup hot water
1tablespoon sweet soy sauce
1-teaspoon cornflour
½ teaspoonful salt
1 teaspoon raw sugar

Method

Sauté the garlic with oil for a few seconds add in the chopped tomatoes, cook until softened
Add in the tomato paste, chilli powder, stir and mix them together until smooth
Stir in hot water, add in the soy, salt and sugar, and bring to boil
Keep on cooking over low heat for 7 minutes, on a gentle simmer
Dilute the cornflour with water; add into the chilli mixture to thicken
(You can add some fish sauce if you like)

To keep the sauce

Transfer the sauce in a bottle; top it up with some fresh oil.  Refrigerate!

Plum Sauce




Spring Rolls Served with Plum Sauce




To Make the Plum Sauce
7 red blood plums boil in 2 cups water and 1star anise
Cook, bring to boil and cook over low heat for 45 minutes
When it is more relaxed, seed the plums, puree; and strain the juice
Add in ½ teaspoon salt, 2 teaspoons sugar and 1teaspoon sesame oil, 1tablespoon vegetable oil, 1 tablespoon white vinegar and 3-teaspoons corn flour.  Whisk to mix.
Cook the mixture, keep on whisking to thicken
Continue cooking until bubbly for a few minutes.  

Transfer to a storage jar
When it is cold, refrigerate.

Soy Dipping Sauce

2 tablespoons sweet soy
1 tablespoon salt soy
1 lime juice
1 teaspoon white sugar
1 tablespoon hot water
¼ teaspoon salt
½ teaspoon sesame oil
1 crushed garlic and chilli (optional)
Some shredded kaffir lime leaves

Dissolve the sugar with hot water, stir in the soy and mix them well
Add in the rest of the ingredients; mix them together
Transfer in a serving bowl, it keeps for 3 days, refrigerated.
To serve: Serve the dipping sauce for steamed dumplings, lumpia basah.
