Cooking For Easter

Easter celebration is here,  people in Australia love their chocolate Easter eggs and  Easter buns. At present those goodies are plenty in any shops.  How about home cooking, I thought it is a good idea to get things ready.  I did try to make chocolate Easter eggs when the girls were little, the mould for it is still here in my kitchen somewhere.  But boiled coloured fresh eggs were more popular than my homemade chocolate Easter eggs.

Steamed buns for the Easter buns instead of Easter buns made out of brioche.  A healthier and lighter Easter Breakfast is Easter Crown made out of the steamed buns.

Colourful biscuits are good to have for Easter Celebration.  Carnival Biscuits keep for a few days in an airtight container. 

Rainbow and Plain Carnival Biscuits


Plain Carnival Biscuits
(using self-raising instead of plain flour)
1 cup full self-raising flour
1 egg
1 tablespoon oil
2 tablespoons water or less
1 teaspoon caster sugar
A dash of brandy.
extra flour
Oil for frying
Icing powder for dusting

Method
Place the flour in a bowl, make a well in the middle

Add in the egg, oil, water, brandy.

Mix them together to make a soft dough

Dust a surface with the extra flour, place the dough on it and knead it until smooth.

Wrap in plastic, rest for one hour
Unwrap, knead the dough lightly, roll it to make a fragile pastry

Cut in strips or other shapes, then fry in a medium hot oil until golden brown.

Take them out, drain on to absorbent paper, then dust them with icing powder
When they are cold, keep in an airtight container to stay fresh

The meat for Easter Feast:   most families cook lamb for Easter, it is very appropriate to do as we have the best quality lamb in the world.

We used to have a good neighbour - a Greek family, they cooked a full lamb on the spit for the Easter Celebration. When they had it, we had a taste too. They were very generous people

For my family, we would have a roast lamb for the day, boiled eggs for breakfast and hunting games for chocolate eggs are trendy for the grandkids. The Easter buns are there as well, but they are homemade from brioche dough.  I found that the traditional Easter buns are challenging to do. That is Easter Celebration for us.

We always have enjoyable Easter Celebrations.  Even though the children are grown up and they have their own places.  They are happy enough to come home for the occasions.



I included the lamb recipe, I have not done this cooking myself, but you may like to do it for your family.  All the very best for you.


A grand recipe for Easter Lamb.

-Alexandre Dumas père, who wrote a gastronomical dictionary, gives for the preparation of Pascaline of the lamb the following recipe.

"The custom of serving a lamb whole on Easter Sunday was kept in France until the time of Louis XVI.  This how the dish was prepared:
"The neck of a six-month-old lamb was boned, the breast bone swan through, and the shoulder bone is broken and trussed to the breast.  The 2 shank bones of the legs were also broken and fastened in the same manner.
"It was stuffed with a forcemeat of pounded lamb, yolks of hard-boiled eggs, stale breadcrumbs and chopped fine herbs, and seasoned with 4 spices.
"The flesh was carefully larded and put to roast before a big fire.  It was served whole, as a separate course, after the soup,  with a green sauce or on a ragoût of truffles cooked in ham jelly."
