Potato Bread Rolls

There is nothing like home baked bread.  Give us our daily bread, there is nothing more satisfying than baking your own.  The smell lingers in the kitchen to give you warmth and comfort.

Freshly baked potato bread rolls in my kitchen, I am so pleased that my very own recipe did the job.  The rolls are light, and they have pretty coil pattern.   They can be served in many ways.

Eat it plain, cut into two and thickly spread with butter serve with hot soup.   Or fill the rolls with fillings, lettuce, avocado and meat dressed in mayonnaise. 
Have it as open rolls,  spread them with butter then add some topping as you like, can be a savoury or a sweet.  Serve the freerolls on a plate.


Freshly Baked White Potato Bread Rolls

This baking is dedicated to my daughter Jane, as she gave me the idea about serving sandwiches as open sandwiches which have many different types of toppings.  Instead of making free sandwiches, I baked the potato bread rolls to serve as open bread rolls.  Now the name becomes "Jane Open Potato Bread Rolls".

The Recipe
Jane Potato Bread Rolls
Ingredients
300 g plain flour
7 gr dry yeast
175 ml of water from boiling potatoes
1 tablespoon mashed potato
extra flour for dusting

Method
Mix the yeast with warm potato water, leave it for a few minutes
Mix together the flour and the yeast mixture
Turn dough out onto the lightly floured surface, knead it for ten minutes until smooth and elastic.
Shape the dough into a ball, rub it with oil
Place the dough in a bowl, cover and prove for one hour
Form into seven round coils and place them on a lined greased baking tray. Prove for forty-five minutes.
Bake at 200 degrees C for 13 minutes.
(The bread roll does not contain salt, sugar and fat)

To serve the rolls, have them as wide rolls with varieties of topping, or as a garnish for braised meats and soups.

Toasted Potato Bread Rolls Served with Fresh Figs and Honey


Chose your own topping, the choice is endless.  These are a few ideas: goat cheese with figs smoked cheese with sun-dried tomatoes, avocado and chicken, salmon and cucumber.  Or just simply mixed baby salad greens with dills dressing and add shaved Gruyere cheese.

  1. Lovely mum - you should use the baking paper as wrapping paper! It's really pretty! Will give that a go as soon as I go back to the mill for more organic flour! Xxx
