Baking Biscuits

Healthy Biscuits - Honey Fig Cookies

For the first time this year, I baked biscuits, very healthy cookies.  It is not my recipe, so it is good to try out some one's method.  They don't look the same with the picture, but the taste is good.  The biscuits are made out of figs, nuts and honey.  I used almond instead of pecan nuts. 
The process of making it is so easy, and it is not expensive, I think it is good for us to have one with our cuppa.

Freshly Baked Honey Fig Cookies

The Recipe

Honey Fig Cookies
(Based on (EQHR:  Easy Quick Healthy Recipes)

Ingredients
1 cup all-purpose flour
1/2 teaspoon baking soda
a dash of salt
1/2 teaspoon cinnamon powder
a bit of nutmeg and a dash of cloves powder
75 g unsalted butter
75 g honey
1 egg
1/2 cup dried fig, soaked in warm water, then chopped
1/2 cup chopped almonds lightly roasted

Method
Preheat oven to 175 degrees C
Line baking sheets with baking paper
Sift flour, baking powder, spices, salt,  set aside
Heat the honey and butter until it is melted
In a bowl, whisk eggs, pour the honey mixture and continue whisking until blended.
Stir in sifted dry ingredients, fold in figs and nuts
Drop dough by spoonfuls on baking sheets
Bake for 10-12 minutes or until edges are lightly browned
Transfer on wire racks and cool completely

The Process

Baked Honey Fig Cookies

The biscuit is delicious, and not too sweet.  The honey and nuts did it. A batch of this baking keeps us going for a week at least,  I will try again, and maybe the biscuits will look the same with the original picture, which is roundish and flat.  Mine is puffy, dry and crisp outside but soft in the middle.   It reminds me of rock cakes.

It was fun, a fun baking day.
