Vegetables

Twin   Red   Mini  Cabbages

Harvesting two mini red cabbages today, I thought they have been a long time growing in the pots.  I am not sure that they are suitable for fresh salads.  I am thinking to cook them, stuffed and braised. They are refrigerated at present to stay fresh.

I had prepared red cabbages in the past, fresh salad and cooked shredded red cabbage with apples, it's delicious to be served with sausages or pork.

Two recipes today: colourful cabbage salad and sauté red cabbage.
The colourful cabbage salad is served with lamb, and the sauté red cabbage is served with plain brown rice.  Both are very enjoyable to serve for hot days.

Colourful Cabbage Salad
2 cups shredded red cabbage
1/2 cup grated carrots
2 kaffir lime leaves, shredded

The dressing: light simple vinaigrette
2 tablespoons vegetable oil
1 tablespoon white vinegar
a pinch of salt
Mix all ingredients, and keep aside
Place all salad ingredients in a bowl
Add in the dressing, toss and mix gently
Transfer onto a serving plate
Serve the salad to garnish grilled lamb

Other recipes today, sauté shredded red cabbage with bacon served with plain brown fried rice.

Sauté Red Cabbage

Ingredients:
2 cups full red cabbage, chopped finely
1 bacon rasher, sliced
1 clove garlic, crushed
1 tablespoon oil
Salt and pepper to taste
Chopped mix herbs or flat parsley

Method
Pan fry the sliced bacon in hot oil until the brownish colour, keep aside
In the same fry pan, sauté the garlic until fragrant, add in the cabbage, stir
Cook for a few minutes until cooked, but still crunchy, add in the bacon and mix
Transfer onto a serving plate, serve the cabbage with plain brown rice.


The twin mini red cabbages are going to be stuffed with meat and also vegetarian stuffing.  See how I go, I must post the result next time.


Updating the Vegetables Patch, the green beans are growing very well, and the silver beets are harvested and cooked for a lot of delicious healthy meals.
