A Cold Table

Food To Share

Having a cold table for a gathering is a great idea, especially during a hot season. 
We had delicious cold dishes for the Christmas Lunch.  Disposable plates and cutlery were used, no washing up was necessary. 
To be practical, it is a must if you are busy with little children.  Well done, Mel!

The Cold Table Of The European Dishes

We did not have the traditional European dishes according to the Cordon Blue cookery, but they were collections of beautiful recipes which made excellent and delicious dishes.

 They were a few delicate sauces and dressing to choose from:  gribiche sauce, seafood dressing, mayonnaise and saffron.  I did not take snapshots accurately and clearly, but this is the gribiche sauce

Sweet and desserts were there, fruit cake icy cream in brandy,  I tasted, it was delicious.  Fresh fruits, minced tarts and chocolates, Christmas cake, all that delicious food was not eaten, as another party has to be attended to on the same day.  It was a special gathering for the year.
Thanks to Mel and family and of course to Susan too.  It was an experience to us both.

The first experience that I had for serving Turkey room temperature was in New Year's  Eve.  It was not bad at all, but adjustment for garnishes was needed.  Potato rosti instead of roast potato.  Boiled vegetables instead of roasted vegetables.  The stuffing was bread and nuts instead of meat.
What you need is a young turkey which does not need to be cooked for a long time.  Fresh whole turkey about 3 to 4 kg is the best.

Summer is an excellent time to enjoy cold food, such as salads or cooking for a cold table. Here I am sharing a recipe for daily meals, fresh mushroom salad.

Fresh mushroom salad
1 cup young button mushrooms, cleaned with a cloth.  Trim the stems off.
3 tablespoons olive oil, 1/4 teaspoon salt, 1tablespoon fresh lemon juice
Shredded lemon rinds, lemon thyme.
Mix all ingredients together, place in a serving bowl, cover with plastic to stay at room temperature.
Serve the mushroom in the same day.  It's an excellent garnish for carrot loaf with nuts.
