New Year

New Year - New Journey


Hi everyone, I am back and hope I bring you good news and enjoyable pastime.  From cooking, gardening and also other experience that I may have had.  It has been a lovely break, spending time with family and friends, celebrations for Christmas,  the New Year and so on. 

The new year will bring more activities and fitness for us, my husband and I have bicycles and tend to ride as much as possible on top of our sport of table tennis.  I am looking forward to having a healthy and exciting journey.

Cooking and Recipe for Today:  Baked Prawns And Silver Beets

Delicious fresh green prawns, silver beets cooked/baked in white sauce with saffron flavour.

White Sauce with Olive Oil

A basic white sauce is usually made with butter, flour and milk.  It is just as good with olive oil.  This recipe is based on Jenny Baker’s
300 ml of milk
1 tablespoon olive oil
2 tablespoons flour
Put milk, oil and flour into a small saucepan and beat over medium heat using a wire whisk.  As the sauce begins to thicken, lower the temperature, bring to the boil and continue to beat for 2 minutes.  Season to taste with salt and pepper.
For a cheese sauce, simply add a pinch of nutmeg and stir in 75 g grated cheese, off the heat.

The Recipe
Baked Prawns  And  Silver  Beets

Ingredients
250 g  fresh sliver beets, the green only, washed, dried and shredded.
2 tablespoons garlic chives, chopped
2 tablespoons olive oil
1 batch of white sauce
1 egg
a small pinch of saffron, soaked in hot water
(mix the white sauce, saffron and egg to make a smooth thick mixture.
335 g prawns, cleaned and deveined
Extra olive oil

Method
Heat the oven up to 200 degrees C
Sauté the silver beets and the chives with olive oil until cooked, do not overcook.
Transfer on a shallow baking tray, place-spread the prawns on top
Pour the saffrons sauce mixture over it and drizzle a little extra oil
Bake in the preheated oven 200 degrees C for 12-18 minutes
To serve
Serve with herb bread or crusty bread if you wish.

Preparation and Cooking



It is a friendly cooking style, not hard at all. Great for midweek cooking, quick and easy.
If you like the taste of cheese together with prawns, you could use a cheese sauce instead of white sauce with saffron.
