Tomato Salad

Yellow Tomato Salad

Fresh tomatoes picked today, and green beans make a good combination salad.  Everyone makes the tomato salad, what is unique about it?  It is very bright, the yellow tomatoes are so beautifully different, very meaty, sweet and almost seedless.

It is a delicious golden yellow tomato salad. 

A recipe to share.

Fresh Yellow Tomato Salad

Recipe

Yellow tomato salad

Slice  two yellow  tomatoes thinly
A hand full beans, blanch until cooked but crunchy
Red onion, slice thinly about two tablespoons
Place and arrange all the ingredients on a serving plate
Dressing: vinaigrette with herbs

1 tablespoon  extra virgin olive oil
1/4 teaspoon salt
1 teaspoon chopped herbs-flat parley and basil
2 tablespoons white vinegar
Mix all ingredients until combined

Add the dressing onto the salad, drizzle over it, before serving
To serve:  Enjoy salad as it is or serve with grilled meat or fish

The Yellow Tomato Salad is Ready to Serve



The fresh tomatoes, beans and herbs make an excellent combination for tomato salad.  The red onion is not from the garden, though, it was from the market.
Other dressings that go with tomatoes are mayonnaise, peanut butter sauce or only lime/lemon juice.

It has been a warm Thursday, but it's an enjoyable one.  I do hope yours too.
