Recipes from Zoe's farm

Nectarines, Banana Clusters!

We had the fresh vegetable rolls yesterday of Zoe's recipe, now she is sharing a sweet recipe.  In her farm now,  stone fruits are harvested, her nectarines are doing very well.  She poaches, stews the nectarines every year and also makes some jams. 

She loves fruits, she often buys tropical fruits such as mangoes and bananas.  We all know that bananas don't keep for a long time on a hot day.  Zoe had some bananas from her last shopping week,  they did not look perfect, they were brownish. However, the inside was OK, and the taste was good too. 
Wasting food is not her habit, to make the best of what she's got is her forte.  She decided to make banana clusters,  one of her family favourites.

Zoe is delighted that she can share her recipe.

Banana Clusters
  1. Two medium bananas, sliced in rounds thinly, make them into a few small clusters
  2. One tablespoon sour cream warmed and a tablespoon self-raising flour.
  3. Rub the warmed sour cream on the banana clusters,  then sprinkle some of the self-raising flour.
  4. Pat them together gently, until they are sticky, turn them over, sprinkle with the rest of the flour
  5. Pan fry in medium heat with butter or margarine until golden brown (play around, turn them more than once, until the bananas cooked through)
  6. Transfer onto serving plate, dust the banana clusters with icing sugar or drizzle with honey.
  7. To serve, serve with fresh strawberries, or nectarines stew and yoghurt/cream.

It is an excellent way to save overripe bananas, however, if you use just ripe bananas, they hold the shape better.  A sweet treat for breakfast to start a new day!

We had them for morning tea today before a bike ride.  It was a good time riding the bike on a sunny day, it's so addictive.  I think it is going to be routine activities now, to keep us fit and healthy
