Baked Chicken Pieces

Chicken Maryland

Baked young chicken Maryland with yoghurt and garlic is delicious to serve with steamed rice.  Get a few pieces Maryland, marinade them with yoghurt, turmeric, salt and garlic for overnight,   Bake in a very hot oven until golden. They are delicious and have delicate flavours, they are excellent served warm or room temperature.  This dish has no sauces, but the creaminess of the yoghurt goes down well with the rice.  A salad or a cooked vegetable dish has to be served to complement the chicken.

Baked Chicken Maryland
3 chicken Maryland pieces
3 tablespoons plain yoghurt
1 tablespoon lemon juice
3 garlic cloves-halved
1 teaspoon dried turmeric powder
1 teaspoon salt
Method
To marinade
Place the chicken pieces in a bowl, add all ingredients, mix and toss them together.  Cover with glad wrap, keep overnight refrigerated.
Take the chicken out from the fridge half an hour before baking.
Heat the oven to 210 degrees C
Place the chicken pieces on top of a baking rack-skin down, lay them side by side, not overlapping.  Reserve the leftover yoghurt from the marinade.
Bake in the preheated hot oven for 25 then turn them over, put the reserved yoghurt on each of the chicken pieces and spread it thoroughly.  Put it back in the oven bake in a reduced heat at 190 degrees for about 18 minutes or until golden brown.
Transfer on a serving plate, serve hot or room temperature
To serve
Serve with steamed rice, garnished with fresh yoghurt and chilli and a salad

    We are having this tonight! I misread the recipe and chopped up all the garlic and mixed it in with the yoghurt etc, but smells great baking in oven now. Hope kids eat it! Mel x

  2. It was delish. Thomas fell asleep before dinner and is not going to wake up before tomorrow morning I think, so we will eat the rest cold tomorrow. Lucky, as it is a hot day tomorrow and we can have cold chicken and salad. Mary Rose and Henry ate theirs all.
