Hot Chillis for Chermoula


A taste of Morocco, chermoula is hot and spicy paste for cooking fish and meat.  The ingredients are chillis, garlic, paprika, cumin, lemon, olive oil and salt.

Chermoula can be used equally well for cooking or marinade fish, meat and chicken.  Or simply brushed over meats before grilling or barbecuing.

Recipe
The Ingredients for chermoula


Chermoula
3 cloves garlic
1 chilli, chopped (more if you wish)
1/2 teaspoon salt
3 teaspoons paprika
2 teaspoons cumin
1 teaspoon dried parsley
(mix with a blender all ingredients to make a smooth paste)
6 tablespoon lemon juice
3 tablespoon extra virgin olive oil
red onion (optional)

Put the smooth paste spices onto a saucepan
Add in the lemon juice and the oil
Heat it gently, stirring, but do not boil.  Cool again before using.

I prepared with capsicum mix with dried chilli powder, mix all ingredients together.  A fresh marinade for grilled fish.  White firm fish is good to cook this way.

Keep fresh chermoula in a jar, refrigerate for a few days.



Hot - Harissa

Another flavour of North Africa is harissa. It is a fiery red paste made predominantly from chillis.  It is simple to make and store at home.

Harissa
50g dried red chillis
3 cloves garlic
3 teaspoons cumin seeds
1 teaspoon caraway seeds
1teaspoon salt
1/2 cup tomato pure
1/2 cup olive oil
Soak the chillies in hot water for 25 minutes
Drain the chillies, place in a grinder with the garlic and all the seeds
Grind to a paste then add the tomato puree, oil, mix them well.
Place in a screw top jar, refrigerate to store.

Harissa is excellent to add in soups, also used as flavouring meat, vegetables and poultry dishes.

These two recipes are based on cooking using Le Creuset.

Give a try to make these condiment paste.  Hot and spicy cooking could be done at any time.
