One Pot


A Full Meal In A Pot 

Cooking a delicious family meal in a pot.  On a hectic day when cooking has to be done, this is the way I do.  Use easy cut of meat or chicken, and vegetables that go with it.   Serve it with bread, or you can add potatoes in the same pot.  It is a dish for a complete meal.

Light Braised Chicken and Chestnuts

I use anything ready in my pantry and the fridge, chicken fillet, chestnuts, Brussels sprouts and potatoes.  The cooking will take for sixteen to eighteen minutes with the preparation for ten minutes, or it can be less if the chestnuts are already peeled.

Recipe - Susy's recipe

Light Braised Chicken and Chestnuts
serves 3-4

Ingredients

2 pieces chicken breast fillets about 450 g,  sliced thinly
1 teaspoon mustard, flour and salt
16 chestnuts, peeled
4 small potatoes, peeled and quartered
8 Brussels sprouts
Oil and butter: 3 tablespoons oil and 25 g butter
2 shallots or white onions,  peeled and halved
bay leaf, or bay leaf powder salt to taste
2 cups chicken stock or water
To serve: leafy salad with lime or vinaigrette dressing

The Cooking

On a heavy based pot, fry the chicken fillets which are rubbed with flour, salt and mustard
In oil and butter until lightly golden, for 4 minutes.  Take them out of the pan, keep aside
Using the same pot, put the potatoes, fry until golden and almost cooked,
add in the onion or shallots, cover the pot cook for 3-4 minutes,


Put the cooked chicken back in the pot,  add in 2 cups of stock, the bay leaf, chestnuts, the Brussels sprouts and season with the salt, cover the pot and braise for 8 minutes over a low heat
The cooked dish.
Serve hot with the leafy green salad. 

An efficient cooking and satisfying meal, delicious, moist and flavoursome chicken fillets, the bay leaf powder and shallots enhance the taste of the dish.  You do need the leafy green salad to serve it.  It's almost an autumn dish, but it is suitable for a mild winter day.
