Moist Milo Cake



Milo Chocolate Cake
Yummy treat and a pick you up, after having a good sport, is sliced of Milo chocolate cake.  The cake has all the goodness and chocolaty taste.  It is my own recipe, a very easy quick mix method cake.  The cake keeps well, stays moist in an airtight container for a few days.

Milo Chocolate Cake Dusted with Icing Sugar.

The main ingredients for the cake are flour,  Milo, cocoa powder, brown sugar, egg, oil instead of butter,  braised fruits in syrup, pear, apple or quince.  The recipe is for you all to try.

Braised Fruit in Syrup
500 g fresh ripe pear or delicious golden apple
200 g sugar
200 ml of water
1-star anise or 1 cinnamon stick
Place all ingredients in a pot, cook until the fruit is soft over low heat about 35 minutes.

Milo Chocolate Cake - Susy's Recipe

Ingredients


2 cups self-raising flour
1 tablespoon cocoa powder
1 cup Milo
½ cup brown sugar
1 cup sweet fruit pure in syrup (a half quince, pear or apple)
2 eggs
2/3 cup oil
Braised diced fruit about a cupful

½ bicarbonate of soda and 1 tablespoon water

Method

In a large bowl, place the dry ingredients: flour, cocoa powder, Milo and brown sugar
Mix oil and the eggs are beaten lightly
Add in the egg mixture onto the dry mix, also the sweet fruit puree and mix and fold together
Add in the poached fruit, and mix 
Now add in the bicarbonate mixture, stir in and mix to combine
Spoon, onto a prepared lined tin, bake in a moderate oven at 170 degrees C for 41-45 minutes.

Place some fresh bay leaves on top (optional),
then bake in the preheated oven
for 41-45 minutes or longer depending on your oven

After 33 minutes of baking, cover the top with a piece of foil to prevent burning
Let it stand on the tin for 10 minutes before turning out to cool
Freshly Baked Milo Cake

Note: bake in small single cupcake tin for 20-22 minutes.


The bay leaves give extra flavour to the cake, but it is optional.  To serve, place it on a cake plate, dust with icing sugar, or top it up with chocolate ganache.
