Cauliflower (Continued)

To Cook and To Dress Cauliflowers.


White and Purple Cauliflowers with  Lemon Butter
Cooking cauliflowers for garnish: steamed, fried, baked or sautéed.  Two dishes cooking the cauliflowers for garnish of meat or fish dishes. Cut the cauliflower and boil in salted butter until cooked but still crunchy.  Shape the two colours into a dome then dressed with lemon butter.

Have another shape that you like, be creative.
It can be done in an around and large dome or in a small size.









For a dinner party, try to make an individual, in a single muffin tin. They look cute, the cauliflower has to be cut into small florets.

 The other dish is simply boiled the cauliflower flowerets then dressed up with butter and herbs.

Simple Recipe
White and Purple Cauliflowers with  Lemon Butter
Boil the cauliflowers in salted water for 6 minutes,
until cooked but crunchy

Separate the flowerets from the core of both colours
Heavily butter a large Pyrex.
Line the dish with white cauliflower, then the purple, white,
then purple, pressing the vegetables down slightly as you layer them.
Keep layering until the bowl is full.
Unmold on a serving platter and make lemon butter.


Lemon Butter
35 g unsalted butter
1 tablespoon lemon juice
2 tablespoons water
salt and white pepper
Place the water, lemon juice, salt and pepper in a pan, cook to boil
Add in cubed butter into the boiling mixture
After all, butter has been added and melted then stir
Stop cooking, pour the lemon butter at once on top
the unmolded vegetables and serve right away.

It is served to garnish, meat, chicken or fish dishes.  However, it can be served on its own.


Good cauliflower cooking was based on the recipe of Jacqués Pepin.  

Another excellent cooking of cauliflower is soup.  It is a delicious dish for winter.  Maybe cauliflower, mixed with potatoes and bacon, it makes a very thick and delicious soup.
