The day before Ash Wednesday is Shrove Tuesday, pancake day. Pancake Day is the last day before the period which Christians call Lent. It is traditional on this day to eat pancakes.
Why? Because Lent is a time of abstinence, of giving things up. So Shrove Tuesday is the last chance to indulge yourself and to use up the foods that aren't allowed in Lent. Pancakes are eaten on this day because they contain fat, butter and eggs which were forbidden during Lent.

Shrove Tuesday always falls 47 days before Easter Sunday, so the date varies from year to year and falls between 3 February and 9 March.
Enjoy the Shrove Tuesday, I am sure you could indulge your self in eating delicious, pancakes with sweet honey and fruit toppings, garnished with ice cream or just plain soft pancake with jam.

Makes 13 small pancakes
Ingredients
½ cupful self-raising flour
2 eggs, lightly beaten
1 dessert spoon yoghurt
2/3 cup milk
1 teaspoon sugar, a pinch of salt
40 g melted butter
Method:
Mix together the milk and the yoghurt
Place flour in a large bowl, add in the sugar, salt
Add in the lightly beaten egg, the melted butter and stir in the milk-yoghurt mixture
Mix together to make a smooth batter. Rest it for 35 minutes at least.
Serve warm or hot, put any topping as you wish
To Cook the Pancakes
Fresh Festive Fruit Pancakes
I did savoury pancakes as well, use the same batter but omit the sugar, you can add some grated Parmesan cheese or Gruyere and have caramelised onion for the topping. They are absolutely delish.
This Shrove Tuesday I did savoury pancakes, with salmon and tomato sauce topping and garnished with yoghurt. Another delicious savoury pancake.
