Fresh Fruits-Festive Food

Ode To Fresh Fruits


Here in Victoria,  Australia, we have loads of fresh fruits, beautiful colours and tastes.  From stoned fruits: plums, nectarines, peaches, to soft fruits: all the berries, grapes and also tropical fruits, bananas, pineapples, mangoes, watermelons and not to forget that we could have fresh oranges throughout the year, they are very juicy.

Eat it fresh!  Fruits and some vegetables are best if they are eaten raw, including fruits salads or green salads.  Other things that we can do: serve the nuts as a fresh fruit platter, or serve as smoothie drinks, mixed fruits to garnish cakes etc.


Fresh Fruits as Garnishes
Slices fresh fruits from mango, strawberry, kiwi, plum, orange and
 whole mixed berries to garnish meringues, cakes and cheesecakes.

Fresh fruit for festive food: avocado sandwiches, they make an elegant, and festive high tea spread.  The mix colours of fresh fruits make the festive table look so grand and invite people to enjoy the festive food a lot more.

A Platter Delicate Avocado Finger Sandwiches

A friend of mine does not take any butter, margarine or cream on her diets.  This is a suggestion to you Mary, you may like these sandwiches.  Use avocado spread for the bread and sliced avocados for the filling, add in some rocket or lettuce and mustard.

Mary's Avocado Spread.
1 large ripe avocado
1 teaspoon mustard
Freshly squeezed a quarter of a fresh lemon
1 tablespoon vegetable oil

Peel and stone the avocado, place in a bowl
Add in the mustard and lemon juice
salt and pepper to taste and the oil
Mix and mash them to make a smooth paste.
(you can use a blender to do it)

Use it as a spread instead of butter or margarine.
