Pizza (Continued)

Susy's Pizza Dough

The pizza that I cooked yesterday was good, but the dough was not perfect.  It's hard and chewy, it was not enjoyable.  I thought I have to fix it.  The composition of the ingredients, the procedure and technique of the making have to change. 


1-hour proofing, it did not rise to double
A few flaws:
1. Using dried yeast directly instead of dissolving first,
2. It did not have enough amount of warm water and a little less oil,
3. The kneading of the dough was not perfect, I stopped to knead before it reached into elasticity. 

The result was the dough did not rise properly, and took a long time too.  Sadly the pizza had a very tight base.  Yes, it was delicious pizza toppings, but it was not enjoyable because of the imperfection of the dough.

The cooking technique:  cook over a hot stove, uncovered instead of covered because the heat of the steam made the dough hard and tougher

I thought it is only fair if I post the proper and delicious pizza dough recipe and how to make it properly and here it is.

SPD-Susy's Pizza Dough
To make a large pizza or two medium small

The Dough

2 cupfuls plain flour
1/3 cup warm water and 2 tablespoons extra
7 gr dry yeast
1 teaspoon sugar and a pinch of salt
1 tablespoon olive oil
Extra oil

The ingredients of the dough

mix the yeast, with warm water and a pinch of sugar
wait for 3-5 minutes until frothy

place the rest of ingredients in a large bowl, add in the yeast mixture, mix together. 

use your hands to
bring the dough together in the bowl

turn the dough onto a lightly floured surface, knead
for 8 minutes or until smooth and elastic.

place the dough on an oiled bowl, turn the dough
over to have oiled all over

cover the bowl with plastic wrap and keep it
in a warm place about 35-1 hour to rise

keeping the dough in warm  room temperature

the dough rise to double in bulk after 35 minutes

it is time and ready to roll the dough to make pizza
 Susy's Perfect Dough

It yields about 539-gram dough. To have a ready dough is great because you can make pizza at any time. It can be frozen, defrost it in the refrigerator.


Non-Baked Pizza  - Non-Baked Oven Pizza
Roll the dough thinly,  make a round shape

Put the dough in a frying pan, add topping as you like it, cook over stove over hot heat for 3 minutes uncovered, reduce the heat cook for 4 minutes further.  Transfer on a tray put under a hot grill for another 3-4 minutes.  Now you have it, a delicious nonbaked pizza with crusty base.  Yum!

IT  IS  A  FAST COOKING TECHNIQUE AND ENERGY SAVING.
