PRETTY PANCAKES



Sweet Pancakes
Shrove Tuesday.  We celebrate the day by preparing and eating delicious pancakes.
Pancake dressed in honey and fruits
There are recipes for sweet pancake, this pancake uses sourdough starter/leaven and poolish.  It is beautiful and very light pancake also stay moist for the next day.
The quantities of ingredients, I am not too sure as I did not have the record.
As I remember: 200g leaven, 200 poolish, 2 cups plain flour, 2 cups water, 5g salt and 2 eggs.  Mix all ingredient to make a smooth and thick batter.  Let it rest for two hours before cooking.
It has no sugar, but the dressing is always sweet and fresh fruits or poached fruits.  And also it can be served as savoury garnished with salmon or egg, anything you fancy.

The Pancake Batter.

The ingredients: plain flour, leaven and poolish, egg, water, salt.  It is a simple mixture.
The pancake batter is smooth, rest it for two hours.

Freshly Cooked Pancakes

Serve the pancakes warm or room temperature, dress with honey and topped with fruits.  It is delicious served with brown sugar syrup too.
Serve the pancakes as savouries, dress in smoked salmon, sliced cucumber and cream fraise thinly or simply dress it in tomato, cheese and also delicious spread with pesto with more topping.


The undressed pancakes keep well refrigerated for a few days, and they freeze well too

Makes 13 small pancakes

Ingredients
½ cupful self-raising flour
2 eggs, lightly beaten
1 dessertspoon yoghurt
2/3 cup milk
1 teaspoon sugar, a pinch of salt
40 g melted butter
Method:
Mix together the milk and the yoghurt
Place flour in a large bowl, add the sugar, salt
Add the lightly beaten egg, the melted butter and stir in the yoghurt mixture
Mix together to make a smooth batter.  Rest it for 35 minutes at least.
Serve warm or hot, put any topping as you wish



You could cook savoury pancake as well for the Shrove Tuesday, it is delicious, keep on partying and enjoy the variety of pancakes.  Recipe for you.

Savoury Pancakes
 Lumpia Basah.
What is it?  It is mixed meat and vegetable wrapped in light and thin pancake.  You can serve the mixed vegetables and meat as the filling for a pancake roll.  Instead of wrapping into a parcel, simply place the filling on a pancake, and roll it over to enclose the filling.  It is very ideal if you have the lumpia at home, and all the ingredients are at the table, everyone can help them self to make their own pancake roll.


Perfect Pancake
Makes 10


Ingredients:
1 cup heap full plain flour
3 eggs (50 g)
11/2 cups water
2 tablespoons oil
1 teaspoon salt
Place all ingredients in a large bowl, mix and blend them together at once, to make a light, thin batter.




To cook the pancakes
Use a 16-18 cm saucepan
Heat it over medium heat, when it is hot enough draw from the heat
Pour a ladle of the batter into the pan, swirl it around for the batter to cover the full surface
Cook for about 2 minutes until the edges look dry, lift out of the pan
Transfer the pancake on to a plate
Repeat the process until all the batter is used up.
