Hot !!!


Tomato Harvest for Hot Sambal.
Red tomatoes from the self-seeds are here and ready to harvest, we have been enjoying them this summer, they are sweet and delicious to eat as it is or for salads.

Tomato sambal could be done as I have enough red tomato, the family-like it 'Hot', the other ingredients and the red hot chilli are readily available in the market.

Pizza Margarita is going to be on the menu, the weather is far too 'Hot' for having it.

Making trendy tomato salad for summer treat is the time right now, just see! It looks fancy and 'Hot' on a white plate, refreshing for a Hot Day.


Green Tomato
delicious to fried with special batter, but it is better using a large tomato, not cherry.

The green tomatoes were picked for the preparation of a dish which is using all green colour.  Green tomato, green chilli and capsicum, spinach green and basil.  Sharing the recipe today.

The Green Tomato for the 'Hot' and Spicy Dish
Oseng-Oseng Ayam Lombok Idjo (Saute Chicken with Green Chilli)

(Based on Javanese Dish)
Ingredients
500 g chicken pieces of a very young bird
Or 325 g chicken fillets, sliced thinly
Oil to saute
Spices
6 cheery green tomato
1 large green capsicum, chopped
3-5 large green chillies or more
1 large white onion, chopped
2 garlic
1/2 juice of a lime
Salt and sugar
Green spinach leaves
Green Basil
1/2 cup coconut milk (optional)

Method
Using mortar and pestle or food processor, crush the spices ingredients to a smooth paste.
In a wok or a frying pan, saute the hot spice paste with oil until it releases the fragrance
Add the sliced chicken, stir and toss and cover the utensil, cook on high heat for five minutes (if cooking the chicken pieces on the bones, cook on medium heat for 7 minutes)
Stir in the coconut milk, and bring to simmer, stir well together.  Keep on cooking until the coconut milk reduces to a thick sauce.  (optional, if you wish to have a lot of thin sauce then omit the reducing step)
Add the spinach leaves, basil, toss and quickly.
Serve with steamed white rice.

Serving the dish, garnished with finely sliced kaffir lime leaves.
The cooking method is oven-baked, you may be able to cook with ease during colder weather, soon is Autumn, but who knows if we are lucky enough we will have an excellent pleasant cold weather this month, the late of summer.

A fresh sauteed green bean with Hot chilli is one of my favourite vegetables.  I was eight years old to cook sautee beans, my first dish. My parents complimented me, how good was my knife skill, the beans were cut finely and consistently.

Now only working fast in the kitchen get the job done.

Hot and Spicy Rice
Not everyone enjoys Hot and spicy rice, maybe rice pudding is more popular.  My family loves plain white steamed rice served with hot tasty dish and vegetables.  Occasionally as I like to try different dishes, I cook hot spicy food, just the other day, cooking delicious golden rice with the garnishes was fun, it's based on Mediterranean rice dish.  It cooked and braised with a little turmeric, meat, garnished with almonds/pistachio nuts, apricots and herbs.  There is no recipe for this, but one day, I may have the recipe ready for you.

In Java 'Hot' spicy fried rice (nasi goreng) is common, and to be served Hot, not Cold.  The good thing about spicy cooking is you can always adjust the quantity of the chilli to suit your palate.


The Red Tomato
From the harvest of the red cherry tomatoes, to make a lovely tender tomato salad.  Simply peel the skin, and dress the whole round tomato with excellent olive oil.  It is suitable for anyone who loves eating soft food, and indeed they look 'Hot' on the plate, absolutely gorgeous and appetising.

 Open the top-middle of the tomato, and place in a bowl, add boiling water, leave for 2 minutes

 Take one tomato out, peel the skin, but remember it is hot, you could use a cloth to hold it
Keep them fresh in the refrigerator before dressing them to serve as a salad. The dressing, lemon juice, extra virgin olive oil, garnished with fresh basil and shredded lemon rind.

It is worthwhile to spend the time to clean tomato this way, it is easy to eat, and yet it looks pretty on the plate.  A fancy tomato salad good enough to serve at dinner parties for the first course.
