The Sweet Treat
Chocolate eclairs with cream patisserie and Chantilly cream filling which I baked were delightful, light, and creamy.
When the girls come home, we have special treats, Susan and Tris were back home, I had an excuse to do proper cooking.
We had the sweet eclairs with coffee for our morning tea. But it was not for Alfie, he did not get any, he has his own.
The pastry is a choux pastry, and it is not very hard to prepare. I will share the recipe with you. I got the idea by pinching from one method to others.
The Choux Paste for Choux Pastry

Susy Choux Paste

Ingredients:
1cup level strong plain flour sifted well
4 egg (55 g size)
A pinch of salt
10 g caster sugar
½ cup milk
A ½ cup of water
100 g butter
Method
- In a saucepan bring to a boil the water, milk, sugar, salt and the butter.
- Remove From heat, add in the flour all at once, and stir well until combined. Return to the heat and keep on mixing/stirring until the dough releasing of the sides and the bottom from the pan.
- Using Electric mixmaster: place the mixture into a bowl, fitted with the paddle attachment, on medium speed and gradually add the lightly beaten egg, one at the time. Scrap the bottom from time to time. The batter mixture should be smooth and shiny
- Pipe the batter using a large plain tip, on a baking tin, lined with baking paper (or spoon the mixture onto the prepared baking tin)
- Place in the preheated oven at 175 degrees C (a fan forced); bake until the pastry crisps for about 33 minutes
- When cool, fill the pastry with cream patisserie and whipped cream.

You can serve the eclair with fresh fruit aside, kiwi fruits are inexpensive in the shop now. Enjoy the eclairs, eat them with hands or enjoy them with dessert knife and fork.

Sweet indulgence is always welcome for a special occasion. However, I like to have adjustments to the food intake for the following week. Serve less, eat less, healthy diets, no sweets and no fats.
It was a good long weekend for us, to catch up with Susan, Tris and their dog Alfie. Alfie has grown up now, he was more relaxed at our home, he remembered that he had been there before. Susan and Tris are so useful to him, he loves to play outdoors, so he did at our yards, in and out, but Susan and Tris never forget to wipe his paws cleanly before Alfie in, the dog knew it, in fact, he has a unique blue towel, his travelling towel. The discipline school is right for Alfie, it works. Keep it up.

Melanie, you may need the eclairs, I know that you are heading a busy Thursday, have a good time at Catherine. I will bake you the eclairs when you are coming home next time.
To you Jane, you could bake the eclairs as you have a good helper now, Milo - 11 months old is so smart that he could crack an egg for the French Toast. It is good to have him as your sous chef.
