Potato To Pastry



Sweet Potato Cakes and Water Pastry with Egg.

Sweet Potato Cakes.

Sweet potatoes are readily available now in the shops or market, and they are inexpensive.  You could do so much with them, from mashed to served with meat or use them for sweet dishes, cakes, muffins, and so forth.

In Java, I used to snacking with 'timus'-fried sweet potato dumpling.  I am reluctant to do any deep frying at the moment; instead I do baking.

Today I baked honey sweet potato cake with nut topping.  The cake looked good and sliced well too. It is a moist and healthy cake; indeed, we enjoyed our morning tea thoroughly.

If you like to try to bake this cake, I will share the recipe with you.

When I have time, and I don't need to go out or working in the garden, I give myself the treat to make homemade bread or pastry.  I love working with dough to get my hands dancing with flour and water.  It is very relaxing and therapeutic.

Susy Water Pastry with Egg
It is very easy pastry, it cannot go wrong, you can achieve it in no time.

Ingredients
2 cups plain flour
a pinch of salt
1 egg
3/4 cup warm water and 2 tablespoons olive oil

Place the flour in a large bowl, keep some aside for kneading (1 tablespoon)
Add in the salt and mix thoroughly
Put the slightly beaten egg in the middle and pour the warm water over at once.
Mix all together to make a soft dough
Knead the dough onto a floured surface until smooth and elastic about 6-8 minutes
Wrap the dough with cling plastic to rest for at least 25 minutes
Now you have a lovely mixture to work with, I use the dough for my strudels, sweets, and pies.



I did one batch of dough today, and I had fresh leeks from the market, so the dough came handy for me, I baked leek and Feta pie.

It is a delicious vegetarian dish, you may have to serve a salad, leafy salad with Feta cheese is a tasty garnish for it.



Rice Saffron with Garnishes
Another vegetarian dish and does not have any cheese is saffron rice, garnished with sweet honeyed and spicy mixed nuts, a hot onion and chilli pickle with sliced fresh figs.

Stretching the pastry is fun to do.  It does need patience and dedication.

The Water Pastry
The pastry is silky and elastic after about 8 minutes kneading.
Wrap the pastry with cling plastic wrap, let it rest for 25 minutes.
Unwrap, knead the pastry lightly, and roll it into a long sausage then
divide it into 8, to make small balls.
Beautiful pastry with smooth textured, are ready to stretch to make a thin pastry.
Roll two pieces at the same time
The sheet of pastry is getting large and thinner.
Keep on stretching by rolling if you wish to make a finer sheet.  Sprinkle with flour
to make rolling easier.
The last stages - the sheet is excellent and transparent.
Now the pastry sheet is ready to use.  You can use it for savouries or sweet pies.



The Pie

Leek and Cheese Pie


Place a sheet of the pastry on an oiled baking tray.


Place 3 layers on top of the pastry, and brush with oil on,  and between sheets.




The Filling
Saute the sliced leek with oil until soft
add some salt to taste

Add three kinds of cheese, grated Cheddar, Parmesan
and Feta, also the eggs.  Mix them together

Place the filling on the prepared pastry, and cover with four layers of the sheets.  Brush
with oil in between the sheets.  Decorate the top with the leftover pastry.

The pie is ready to bake, on a hot oven 175 degrees C (fan forced) for 35 minutes
until the pastry is golden brown.



It did take a lot of time to do it, but as I said, it's fun.

At this stage, you could keep the unbaked pie in the freezer, then bake it whenever you are ready to have it.
