Does It Works??


The Oven
To have a double oven and different sizes is good, it can be useful, especially the second oven is smaller than the first, which is perfect for cooking for two.  Unfortunately, the grill element for the small oven is broken,  now is waiting for fixing, but I could use it for baking pastry, only it does not brown the top.  Today I will try to bake a pastry dish using my water pastry, and see how it goes. It is Fetta and Egg Pie Scroll.


Susy water pastry.

The ingredients
1 heaped cup plain flour
1 teaspoon salt
1/2 cup warm water
1 tablespoon oil
Method
Place all dry ingredients in a bowl
Make a well in the centre
Add in the oil and pour the water at once
Mix together to make a smooth dough
Knead the dough for a few minutes until soft and satiny
Wrap in plastic and rest it at least for 25 minutes
Roll it out, stretch and roll to make beautiful pastry sheets.

The pastry makes 6-8 pie scrolls.

The dough is smooth and satiny.

145 g Fetta cheese
6 eggs
Spring onion
Salt and pepper


You may have questions, why the recipe for the water pastry not always the same, why she is not consistent about it.  I could explain it.
The expert said:
The moisture in the flour varies from season to season. Humidity will be absorbed by the flour in the summer and water should be decreased in the recipe.  Vice versa in winter. (Jacques Pepin).


Simply follow the recipes, and they all work well.  We know that every flour is different in the way to absorb water depending on the weather.  If you look upon my older posts, you may find the variation of Susy water pastry, and it works.

Filling the Pastry and Shaping
The Scroll is ready for baking: Bake at medium-hot for 25 minutes
After 20 minutes of baking, I turn them over and put back in the oven and continue baking to brown for 5 minutes.

It could be better baking for 13 minutes then turn over and continue baking for another 13 minutes.

The Pies look alright, but not golden brown enough.
The recipe of the water pastry worked well, and the oven did a reasonably good job.  And the Feta and Egg Pie Scroll baked beautifully.  There are so many tricks to work in the kitchen to make things better.
