Goodies In Parcells


Poached Giant Dim Sim
It is a giant dim sum, similar to what you buy in the shop "steamed dim sum"  only it is better.  A homemade wrapper which is prepared from scratch and the filling is mixed vegetables and meat; chicken, fish or pork.

It looks so pretty, poached to cook, it is healthy and also so perfect food for the cold day.
To prepare is very easy, and the ingredients are readily available in every home.
The parcel freezes well, any leftovers can be kept frozen for a month at least.

The process of making the poached giant meat and vegetable parcels is so simple, and it can be fun.
The pastry: one cup heap full plain flour, 2 tablespoons lard, salt and 1/2 cup hot water.  Mix all together to make a soft dough, knead lightly until the mixture is smooth.  Keep aside to rest for 35 minutes.  It makes 12 large wrappers.

The filling: 300 g minced beef (you can use other meat as you wish), 1 onion, shredded fresh ginger, an egg, carrots-diced, chopped cabbage and leek, salt and pepper to taste, sesame oil.  Mix all ingredients together, reserve some of the diced carrots for the topping/garnish.

Make 12 small balls.
Roll a ball until very fine and thin onto the size of a small plate.
On a floured board place the large dough, put some three tablespoons of the filling in the middle,

spread evenly to make a small round, bring the edges of the dough in, and almost enclosing the filling. (at this stage you can freeze the parcel).   Add some of the diced carrots in the middle, then poach in boiling stock for 5 minutes, reduce the heat down and keep on cooking over a lower temperature for 7 minutes.  Cook one at a time, depending on the size of the stockpot.

Serve the vegetable and meat parcel hot with spicy soy sauce.  You may need a knife and fork, as the parcel is large and hot.  It is too hard to handle with hand or chopstick.

Freeze them before they are ready to poach, place them in an airtight container, and place plastic to keep the parcels apart.

Another fun thing to do was that I prepared another batch of dough, but instead of making the parcels I made dumplings.  They are very delicious steamed or fried.

Playing with pastry to make edible parcel was an enjoyable pastime, everyone enjoyed the food.  Another perfect day in the kitchen, clearing up the mess was a different story.
