Coffee and Chocolate Sponge Cake

Back to baking, if I have to remember when did, I bake sponge cake for the first time? I could not give a proper answer really, but I know the year, it was in the seventies.  By looking at the baking tins, they look so tired; definitely, we grow old together.

Baking these sponges in the past, the basic sponge, three eggs sponge, four eggs sponge, Victoria sponge, cornflour sponge, ginger fluff sponge, chocolate sponge, all of them are family favourites, every time I bake sponge, whether for special occasions or for Sunday best it is always accessible.

Chocolate, who does not like chocolate, chocolate cakes I seldom baking but enough for me to say, yes, we do love the cake.   But coffee cake is so special to me, it is always a treat to be served with the hot coffee drink, black or with milk.  It does not matter, it's a butter cake, quick - mix coffee cake, they are as good.  Recently, the thought of baking a coffee sponge cake got me, but is it possible?  Why not what I could do is add the coffee for the flavour.  Brave enough and I did give it ago.  Looking up to the pantry, and got all the ingredients that I wanted, cinnamon and chocolate powder was there too.

The process and the ingredients
3/4 cup cornflour, add 2 tablespoons custard powder, 2 tablespoons self-rising flour, 2 teaspoons cream of tartar, 1 teaspoon bicarbonate of soda, teaspoon cinnamon, and 2 teaspoons good quality cocoa powder (sift all the dry ingredients a few times).  Four large free-range eggs, 2/3 cup caster sugar, 1 tablespoon cold strong coffee (beat the eggs, sugar and the coffee, until light and fluffy for 10 minutes) Stir in the dry ingredients, mix and fold gently but thoroughly.  Divide the mixture into two, place in the prepared tin.  Bake in the preheated oven at 160 degrees C-fan forced for 18 minutes.

Pour the cake mixture onto the ready baking tin
Bake in the preheated oven at 160 degrees (fan-forced) for 18 minutes

The Cakes are slightly Subside, but still, the height reaches to the top of the baking Tin.
Leave in the tin for five minutes before turning out to cool on a cooling tray.

To dress the sponge cake. It needs filling and chocolate topping.   Or, it could be just lovely fill it with whipped cream and dust the top with icing sugar.
It could be served with fresh fruits. The sponge cake is filled with whipped cream and top with coffee and chocolate butter icing.  Serve with fresh fruit aside - fillet orange is the best.

This time, the sponge was dressed with light chocolate ganache, sprinkle with white chocolate finely sliced, and garnished with sliced sugared ginger.  Slice generously and served with black coffee.  It was a treat for me this winter, and friends loved the sponge too.
 A Very homy baked cake, no fuss, dressed sweetly.  It's a light and luscious sponge cake.

Our girls love ginger fluff sponge if it baked well, the coffee and chocolate cake has a similar texture, and lightness, I am sure they will love it. See you at home, like you All.
But you could easily bake this cake in your kitchen girls, you are all foodies and excellent cooks.  Have Fun and enjoy baking, I am sure the simple recipe can work, it works for me.

It has been busy for us since early this week, a big day - and information day on Tuesday, and followed by Wednesday for another appointment, but it's all good.  Before the weekend is another excellent time for a friend birthday.  How your days have been, hope you are all having an enjoyable one.
