SOUP AND SANDWICHES


A very healthy and satisfying meal is soup and sandwiches.  These dishes are what we are having on Fridays for the coming months.  Sandwiches with the crust on and also could be open sandwiches made out of bread rolls. Yes, to lead easy living during that time is what we want.  No fancy food, no take away and no rich food.  As for the soup, prepare and cook a big pot of soups and keep in the freezer is the way to go.

No, fancy sandwiches for Fridays, only nutritious sandwiches

These pretty sandwiches are finger sandwiches, often I prepare for the family when the children and grandchildren come home for a visit.  They are dainty and delicate.

Toasted bread with any filling, makes an excellent hot sandwich.

Slice homebaked bread, add any topping should do and suffice for our dinner to go with a bowl of soup.

Soup
Cooking a big pot of soup to freeze is an excellent idea,  I do a lot of those.  Lentil soup is the family favourite, delicious!   If you need to cook the soup my way, today I retrieved the recipe from my older post for you.

The Recipe

Lentil Soup
There are many lentil soup recipes, but here I am sharing my delicious green lentil soup.  This soup is based on other recipes; I pinched from here and there to create this dish.

Susy's Green Lentil Soup

Ingredients

1 lt chicken stock or water for vegetarians
1 lt water

275 g dried green lentils



Herbs and Spices:

1 large onion, chopped
5 garlic, crushed
2 bay leaves
1teaspoon turmeric
½ teaspoon cumin
½ teaspoon white pepper

3 tablespoons olive oil to saute

Vegetables

2 cups grated or chopped carrots
1cup celery, chopped
2 potatoes, diced and chopped 2 medium-large red tomatoes
Salt to taste

Fresh greens and herbs
spinach-swiss chard and parsley, chives etc
Add in sherry-2 caps full.

 

Optional

Add in chopped bacon or ham during cooking.

Garnish

Chorizo or any sausages, pan fried
Extra olive oil to serve

Method

Sauté the onion, garlic until fragrant, add in all the spices, and cook for a few seconds
Add the green lentil, toss and stir, until the lentil is coated with the herbs and spices.
Add in the stock and water, bring to a boil, cook for 5 minutes
Put all the chopped vegetables, bring to simmer and cook for 10 minutes.
Reduce the heat, cover the pot and cook for one hour or more to get a delicious flavour.

Cooking The Soup
Keeping the soup in a gentle simmer for over an hour, to have an intense and delicious flavour.



Green Lentil Soup with Leafy Vegetables


Soup is comfort food, everyone loves soups, especially in the cold weather, as they said there is nothing like to have a bowl of soup that warms the soul.  Well just maybe the green lentil soup is for you.  Give the recipe a go, you may like it.

Note: you could add hock or bacon for flavour, this way the chicken stock can be omitted if you wish.  Also, disregard the stock for mixed vegetable soup use water instead.

Love to cook lentil soup on cold days, but right now, cauliflower, celery are in season, so these vegetables most probably will be in our menu for these coming months. Indeed, we love those vegetables and their deliciousness.
