CELEBRATE SPRING


Spring is here, our backyard is green but a few plants, trees are burnt by the frost from the cold winter.  The garden does not look good, with dried leaves of the consumed plants the weeds are everywhere growing wild.  The potted plants and orchids are suffering too.  It is no good and disappointment, but maybe positive things I like to emphasise instead.  The soil is wet, cleaning up the weed is so easy.  That what I did today in my vegetable patch.  Now I could see which one the weed and which one the herb.  In fact, I could see clearly that the wild weed Smooth Sow Thistles are growing so well, the young leaf is so soft and green.

Lovely Leafy Salad to Celebrate The Spring.

Fresh leafy green from the garden to celebrate spring.  One of my sons in law said that leafy salad is my signature.  VERY   TRUE!

The self-seed endive is so good, so leafy the fennels grow well, and the sorrels are back showing off the new leaves

The rocket and spinach - warrigal green are growing alright they were from the Baxters, I am sure they will be pleased to know. My wild rocket is at its best, love the flower too. The borage thrives such other potted herbs.

Gathered enough fresh green from the garden, but added some other leafy leaves from the market-the radicchio and cos lettuce, they will make a colourful and refreshing salad which is going to be dressed in mustard and oil.
Washing the Leaves do need time, thoroughly clean, and no sandy leaf that what we after.

Wild weed, edible weed is excellent for salad.  However, you must know for sure to identify it.  Dandelion is such a healthy weed and grows wildly in anyone backyard. It is very popular and used commonly in France as a part of salad ingredients.

Everyone knows what a common weed is, you have to pull it out as it is not necessary to grow in the garden, more so in the vegetable patch as it will interfere the growing of the plants.
Like this plant, for example, I am sure it is a weed it does look like parsley, but the stem is long and spreading, and the leaf is so delicate, it looks so good and almost very appetisingly crisps.  I got rid of those, and now the place is looking very acceptable.

Delicious weed, Dandelion Taraxacum Officinale.

To recognise that this plant is a dandelion, it is so important because there is a plant that looks remarkably similar in term of the leaf and its flower the name is Sow Thistle.
Smooth Sow Thistle is an edible weed, it is delicious to saute, or to boil and dressed in olive oil.

The flower and the colour of sow thistle are similar to the dandelion flower.  The difference is this weed flowers sit on a stem and sometimes on one stem you see a few flowers.  The dandelion flower comes on one stem straight, and the flower sits on the very top.  Like this picture.
The bud of the dandelion soon will open, and it is a yellow colour.

I found one growing in a pot, at present there is no flower just yet, but I do believe that it is a dandelion.  I will show you next time with the picture of its flower.

In the older post, could be a few years ago, a recipe for you regarding this wild weed.  I personally love the fresh young dandelion to add to a salad or merely young dandelion salad dressed in light oil dressing and served with baked chicken, enjoy it for a picnic.

How lovely it was, we have started enjoying the new season.  We celebrated by having the fresh leafy salad, the harvest from our backyard, our garden.  

No, I did not add the dandelion leaf this time.

Have a good time and enjoy the season, maybe it is not ready for smelling the roses in the garden but do enjoy the fresh air,  the sun shines and the blossoms.  There are so many ways to celebrate spring.
