Lazy Lamb


I thought cooking lamb chops was easy enough, but it did not work well for me.  I pan-fried them instead of cooking in the bbq, and the result was not very good.  No, it was not a very enjoyable dinner.  I must do something different with the rest of the chops, maybe braising it is better than pan-frying.

I cooked the chops with spices, using a slow braising technique, until tender.  I call the dish "Lazy Lamb", the fact is that I cooked it in a pot together with spices and other ingredients without any fuss.
In a large and shallow pot,  I placed the herbs and spices mixture and put the lamb chops on top it. Cover the pot and braised until it's cooked.  It was easy, and the lamb chops kept the shape, the meat was intact on the bone but tender, the creamy sauce dressed the beef beautifully.
You can add boiled eggs, potatoes or any vegetables to the Lazy Lamb dish as you like.

To Serve With Rice
Steamed white rice, garnished with the lamb dish, a green salad, and prawn crackers.

The Recipe

Susy Lazy Lamb
3-4 lamb chops, trim the fat and rub with lemon juice
1tablespoon turmeric powder
1 clove garlic, thinly sliced
1 red chilli, thinly sliced
1 red onion, peel, and thinly sliced
1 sliced ginger (small and crushed)
¼ teaspoon white paper
1 table lemon juice
2teaspoons salt
1tablespoon brown sugar
5 kaffir lime leaves
A ½ cup of water
¼ cup oil
(Mix all ingredients to make herbs and spices mixture)

4 Boil eggs (optional)

Method

Place all spices ingredients in a large saucepan and add the water, salt, sugar, and oil, stir together.  Put the prepared chops on top of it and place them neatly.
Cover the saucepan, cook over medium heat for 6 minutes, lower the temperature and keep on cooking for 6 minutes, turn the chops over continue cooking until they are tender.


Add the eggs, the coconut milk and continue to braise slowly for 10-20 minutes over low heat.


Garnish with coriander leaves and fried shallots.

To Serve

Serve with steamed white rice, a salad and prawn crackers.

The dish is based on Javanese flavour "bumbu rujak", it is a mild lamb curry.
You do need a good quality cooking pot with a heavy base to cook the Lazy Lamb.
