Lumpia is one of my childhood's favourites, I used to have them for snacking, but now I am happy enough to have those for my lunch. My family loves them too, and often, I cook them for a treat.
What is lumpia? Lumpia is a pancake roll filled with cooked meat, prawn, and mixed vegetables. It is easy to prepare. The pictures will guide you on what to do.

A platter of Lompia with Garnishes
It is efficient cooking, prepare the filling in the morning and keep in the refrigerator. Cook the pancakes prior serving time. Or make the lot in the morning and serve at room temperature for lunch.
They look good with garnishes on a platter and excellent to share with others for a gathering. Club sandwiches are tremendous but bring lumpia instead of, to give people a treat.
Pancake Batter
Makes 10
1cup plain flour
1cup water
1/2 teaspoon salt
3 large eggs
3 tablespoon oil
Place the flour in a large mixing bowl
Add the salt, egg, the water, mix together to make a smooth batter
Stir in the oil, and mix it well. Put aside to rest.
(you may add extra water if the mixture is too thick)
To cook the pancakes
Heat the pan until it is hotPour the batter with a ladle and swirls it around on the pan
Cook until the batter looks dry and lifted off the side
Take it off; place the pancake on a flat plate
Repeat the process until the batter is used up.

For the filling: do what you like, I want you to improvise!
Tradition Filling: sauteed mixed vegetables (carrots, cabbage, mung beans or bamboo shoots), beef/chicken and prawns. Flavour and spices are salty and sweet soy, salt, white pepper and sesame oil.
To serve the lompia with hot chilli sauce.
