Summer Salads


Composed Salads and Summer Treats
Everyday salads for summer meals are fresh, colourful, healthy and easily prepared in any one's kitchen.

These are cabbage salad with mustard seeds dressing, leafy garden salad with herbs and olive oil dressing, watermelon and rocket salad dressed with light mayonnaise, coleslaw with mustard and mayonnaise dressing, and the last one is mixed fruits, leafy greens and nuts dressed in herbs and vegetables dressing (a variation of herbs and olive oil)
I used what I have in the pantry, herbs and greens from the garden, lettuces and fruits from the markets.  These salads are inexpensive to have and very quick to prepare.
Serve the salads with meat, bread, couscous and rice.  They have simple dressing, the ingredients are fresh herbs, whole mustard seeds, olive oil, white vinegar, lemon juice, vegetable oil and also whole egg mayonnaise.
You don't need the recipes, these are only ideas, you could always improvise about composed salads that you wish to have.

Summer Days

They have been very hot days since last weekend here at our place, we have been trying to keep cool.  Watering the pot plants is a must, and we do it early in the morning or late afternoon.  I picked some roses early in the morning the other day,  to save them from the intense heat,  and the following day all the flowers in the garden were dried as potpourri.

Other salad using fruits that is very refreshing for summer is orange and carrot salad with orange blossom which can be purchased from the middle eastern grocery shops.  What you need are fresh oranges, grated carrots, mints, lemon juice and the orange blossom.



Mangoes are in season, a delicious fruit to eat as it is, or mix into fruit salads, or enjoy it with ice cream and yoghurt, of course, you could use it for flavouring cakes or mousses.  In the hot day, I cooked pancake rolls with mango and custard filling for the family.  It is a treat.

No recipe, but this is what I did, I prepared a large pancake using self-rising flour, and also custard.  When the pancake is still warm, I filled with sliced mango and the custard, roll it and wrap it in a piece of baking paper.  Keep aside to cool.  When it is cold, trim the pancake and slice into five or six.  Dust with icing sugar to serve.

On a hot summer day, having salads is the way to go, eating less is best as we know.
More summer salads we could have, such as rice salad, potato salad and a fruit salad of the season.
