Golden Threads


It was good to have friends and family around, busy and fun.  I thought I would do something beautiful today for myself, working in the kitchen, making something beautiful.  It is sugar spun work, I did once years back without a recipe, today I did it on trial and error, but I am pleased with the outcome.

The experiment was making fine beautiful sweet golden threads, it is similar to fairy floss - sweet maidenhair.  It is made with sugar and water: boil the sugar with water, cook until reaching the stage that you can pull and stretch.

Beautiful decoration for cakes, choux pastry, and so forth.



Dress the cakes, dessert with the golden threads and serve immediately.  It is not advisable to keep for a long time, soon it got air, particularly the humidity, the threads will change in shape.




The  Making

From caramel to the golden threads
After boiling the sugar for a while to achieve the stage of caramelising, drip the caramel on top of the baking paper, let it rest until cool.
Above right-The caramel is dry, and ready for decoration.

Soon after the sugar is reaching caramelisation,  keep on cooking to the spinning stage, then spin the sugar onto threads.

For Cake Decoration.
Get ready for the desserts or cake that you want to decorate, keep it close to you while you make the golden threads.  E.g., to decorate Croquembouche simply spun the sugar, to the golden threads, soon you got them, use it immediately to
decorate the croquembouche.

It was fun to do it, I was brave enough to try, and it worked.
