Chicken Dishes

Baked Chicken

Ayam Panggang - Baked/Grilled Chicken
1 young chicken -1.3 kg
Marinade Ingredients:
2 tablespoons tamarind pulp
1 teaspoon sugar
1 tablespoon sweet and salty soy sauce
1 teaspoon salt
 Herbs and spices: fresh chives, garlic and onion, sliced thinly
Method
Wash the fresh chicken, cut in halves
Place marinade ingredients in a large bowl (make sure it is large enough, fits for the chicken)
Put the chicken in and rub in the marinade onto it, cover with plastic wrap
Refrigerate the chicken for overnight, take it out one hour before cooking time
Cooking:
Heat the oven up to 200 degrees C
Place the chicken, on a baking rack, skin down and bake for 33 minutes.
Turn it over, then switch the oven into the grill mode, lower the heat down to 175 degree
Grill the chicken for 22 minutes until golden brown. (I keep the chicken in the oven until serving time)
To serve: 
Serve hot or room temperature with steamed white rice,  a side salad and sambal






Poached Chicken
Discard the skin, use the meat for filling sandwiches or savoury puff, for adding to salads, and also chopped the meat to add to the bouillon for soup. 



Using chicken fillets, stuffed and poached.  Served with brown butter and sage.



Fried Chicken
Double cooked chicken, first steamed or braised followed by deep-frying.
This Ayam Goreng is based on Javanese cooking, a very delicious chicken dish to be served with steamed white rice, sambal and fresh leafy greens.




Ayam Goreng Jawa

1 whole chicken, cut into pieces 
The Spices


Spices:
1 teaspoon coriander, ground
2 cloves garlic
1 onion
2 teaspoons rock salt
2 tablespoons grated palm sugar
1 teaspoon full of salt!
1 tablespoon tamarind juice+pulps
1 small piece fresh galangal
1 salam leaf
1 cup of water
2 cups or more vegetable oil to deep frying
Method
Put the ingredients into a mortar; ground them to make a rough paste.  You could use a blender too.
Rub the paste onto the chicken pieces, place them in a cooking pot; add in a cup of water.
Cook it over medium heat to braise for 10 minutes; and continue braising for another hour over low heat, covered.  Check it out from time to time
When the liquid is almost gone, the chicken is cooked and stays moist.
Take it off the heat, keep aside to cool.


Frying the chicken:
Put the oil in a wok or a frying pan; when the oil is hot (not too hot) put a few pieces of chicken to deep fry,  cook over medium heat until golden brown.
Take them out and place them on a plate.

To serve

Serve hot or room temperature with rice, garnished with salads and sambal*

These dishes brought back good memories of when I was growing up.  Ingredients and simple instructions are there for you if you wish to try to cook.  I am not fond of recipes really as I always to cook my dishes from the heart; however, people ask sometimes about how did I do it.



To our girls,  you love Javanese food, now, you do not have excuses not able to cook,  check/read this post.  From afar, I wish you for the best every day.   It is good to know that you always be with good friends and all good people, take care!
