Baking Day is a Bonus Day. It keeps the kitchen warm, you feel cosy an comfortable to be inside the house during wintertime. I was baking quick bread as I was rostered to bring goodies for supper. A light savoury bread with topping should be ideal for it, that's the plan.
Quick Mix Herbs Bread.
Ingredients
Soaking saffron in water |
Herbs and grated lemon rind |
Cubed butter and egg |
2 cups self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Herbs-flat parsley, thyme, basil, sage, rosemary, grated lemon rind
100 g butter-softened
1/2 cup mashed boiled pumpkin
2 tablespoons saffron juice
1 egg lightly beaten
1 tablespoon lemon juice
1/4 cup milk
Method
Place flour, baking soda, salt in a large bowl, add in the herbs, mix together.
Add in all the wet ingredients and the butter, mix well to make a soft dough.
The bread dough is ready for baking. |
Bake in the preheated oven at 200 degrees C and for 22 minutes
Cool the bread on a cooling tray.
Slice and butter when it is completely cold, and top with avocado, tomato and cheese

Fruitcake, a light fruit cake could be useful for this occasion, not the traditional fruitcake which contains lots of precious dried fruit, No, not the one, this cake is a quick mix cake adds with poached fresh fruits and in this case, added poached pears. Poached pear in coffee and sugar syrup.
Poaching the pear in coffee-sugar syrup until soft and the syrup is bubbling away. Leaf it to cool in the pot. When it is cold, it is ready to add to the cake mixture.
The syrup
1/2 cup black coffee
1/2 cup brown sugar
1/2 cup white sugar
Put all ingredients in a pot, cook, bring to simmer, stir to dissolve the sugar.
The Pear
Add in the pear and cook until they are soft and it looks brownish.
The Coffee Cake with Pear
Mix all ingredients, stir together, mix quickly to make a smooth cake mixture.
In a bunt tin/glass, line the tin with baking paper, place the poached pear, arrange beautifully and evenly in the bottom of the tin.
Scoop the cake mixture over the pears to cover them, and let the cake mixture reaches the almost two-thirds top in the tin.
Bake in a medium heat at 175 degrees C for 55 minutes or longer until the cake is baked in the centre.
You could make a small batch as I do, using the small terrine which is enough to serve for a family.
From the quick bread, the cake, the bread butter pudding to the scones was beautiful baking.

To Dress The Bread.

Peel the pears, seed, and cut in half.

Two is the dry ingredients: self - raising flour, white sugar, bicarbonate of soda.

Wrap nicely when it is completely cold and place the cake in the airtight container. It keeps well in the freezer, defrosts and dress when you need it.
Love to dress the cake simply dust with icing powder.
Bread and Butter Pudding.
It's a deliciously soft and not too sweet, good to be served warm or cold. Using yesterday bread, butter, milk, egg, and sugar mixture, with a touch of dried fruit to enhance the flavour

Scone is always welcome in any gathering, morning tea, afternoon tea and supper. I did do scone to share for supper, but because it is night time a small scone is the best size.
Afternoon baking at three o'clock, the freshly baked scones were light. While waiting for the scone to cool and to dress, I thought; savoury and sweets both are delicious, a platter of fresh fruits could be prepared too.

To Dress the Scones
Splitt each scone into two, spread with raspsberry jam sprinkle with almond flakes and top with whipped Chantilly cream.
The leftover dough was used for Susy Blackberry Tart, it is so, me!. No one would be using scone dough for a tart, but it is good enough for us, we do not need a rich pastry for the pie. A small pie serves for six was baked beautifully.

From the quick bread, the cake, the bread butter pudding to the scones was beautiful baking.
The baking was done at a different time, some for the deep freezing and some to serve for supper. People who were rostered to prepare the supper brought beautiful plates with savouries, sweets-biscuits, slices, cakes, sponge cake, cream puff and scones, also fresh fruit platers. The supper at the sports club went very well, and I am sure the tradition stays on forever. Congratulations to ALL.
