VEGETABLES - GARNISHES
Using and cooking vegetables in my kitchen.
Vegetables or salads are the first priority in our family diets, various type of cooking is prepared to make the dishes more enjoyable.  Often, it is cooked-boiled and dressed and also served fresh as salads.

Radicchio - pan-fried for salad, dressed with balsamic vinegar, and sliced golden tomato garnished with fried basils thanks to Ann and Max, the tomato was the fresh harvest of their garden.

Stuffed Baked Pumpkin
Find the recipe at an older post, type: using oseng terong to search.  It posted under Easy and Quick Cooking.  Javanese cooking, a delicious eggplant dish.

Washed endives, cooked-boiled and pureed.  Add butter to the pureed endives.  Delicious bitter lettuce to serve hot with anything you fancy.


Fresh greens, with green chillies, braised with coconut milk-sayur lodeh.

Fresh cucumber for a car, Herb Butter is ready for winter, add in cooked vegetables to serve.

For the composed salad, using what you have that is the way, I have all these beautiful leafy green, add cured meat. The preparation is involving frying the meat and egg.  The plan is to make the composed salad as a main meal.

 From prosciutto to chorizo which is chopped and ready to pan fry.

Love the composed salad to be served with sourdough bread.  Let the bread shine and complement the dish. White soft bread is as good if the sourdough is not available.

The egg is deep-fried (French-style deep-fried egg), not boiled.  The dressing is a mustard dressing, add fresh herbs and olive oil.

Mushroom serves as a Salad.
Pan-fried or roasted and garnished with grated carrots is delicious.

Vegetables are cooked throughout the year in my kitchen, we enjoy them with their deliciousness.  You may like to cook these vegetable dishes, at least one of them, ideas for you to have vegetables with the difference.  Have fun cooking!

It has been a good season this Autumn, now we have to welcome the winter with enthusiasm.

ROSEMARY



Herbs
It has blue pretty flower and is very fragrant, what is it, it is a rosemary herb.  In my garden, the potted rosemary herb is in flower, and it is now at its best.

This is what I learnt about rosemary.

Traditionally, sprigs of rosemary are worn on Anzac Day and sometimes Remembrance Day, and are usually handed out by Legacy and the RSL. Rosemary has particular significance for Australians, as it is found growing wild on the Gallipoli peninsula.

The use of rosemary in my place is for cooking, for garnishes and for a bouquet.

Adding rosemary herb to cooking meat and vegetables to make the dish taste better.

Rosemary and potato, chicken, lamb go very well.
Garnishing the dishes with rosemary is my way, love it.

The fragrant of the rosemary herbs is so lovely, often I fill up my vase with the mixed herbs.

Other herbs are growing well in my garden, they are looking alright now, but soon some of these herbs will be sleeping over the winter.

Today is ANZAC day, and rosemary herb has a significant place on the day, traditionally sprigs of rosemary are worn.  I don't think people would have a problem to get the fresh cut of rosemary, it's a good season for it.

The Bread and . . . . .



The breaking of the Bread
Chicken and the Leafy Salad
Freshly baked bread garnished with delicious cooking is a treat, and the joy of the breaking food to serve is beyond words.

Chicken chops were waiting in the refrigerator for proper use, and indeed it's flavoured with preserved lemon, pan-fried it and lightly braised, the dish was ready in no time. The fresh leafy salad was the accompaniment of the delicious chicken.  How good it's, cooking without any recipe, but One has only listened to the heart.

The Perfect sourdough bread,  freshly baked the ‘Boule’ complemented the evening meal.  It was so priceless of breaking the food, the fresh loaf for the family dinner.



We love the occasion of the family gets together, a time where good food is celebrated.

Sweet Yeast Bread
Coffee scroll, the sticky fresh yeast rolls to have with coffee.
To bake the coffee scroll!  Sweet dough is needed, that is the first thought.

Prepare the dough, I like to make it based on brioche.

Baking is not the regular event in my kitchen, but once in a while is good, and make the best of it, bake extra and freeze some, it saves time and enjoys them for next time.

But cooking for everyday meals is almost essential, I rely on very much of home cooking, as having taken away food is not preferable.



Cabbage.
A whole cabbage has been sitting in the refrigerator for some time.  Cooking with cabbage, the famous cabbage roll is one of my favourites  Yes, braised cabbage rolls with a scrumptious filling. The flavour can be varied as what I got for the day.  It is delicious to have saffron and garlic flavour, and braised with extra stock, herbs and tomato.

The bread, glorious bread, glorious food.
The sourdough bread baking as a new adventure has been fun. Unfortunately, the family is not too keen as the crust is rather hard and not easy to eat.  For that reason, I have to do something good for Rayner, to that, the soft loaf white bread was born.  No recipe, but the ordinary baking bread I am comfortable enough.

It is a very soft loaf, sliced well, and the crumb is smooth and not hard.  



Nice Nasi-Delicious Rice
Golden Rice in Curry Flavour
Cooking the delicious and beautiful rice.  First choose the flavour, while I have curry sauce, that would be it, otherwise, love tomato rice, it needs tomato puree which has been braised with olive oil.  The tomato rice has a vibrant red colour, and the delicious rice cooked in curry sauce is golden yellow.

Three cups curry sauce in a pot, add curry leaves add 1cup heaped full rice, cook until it absorbed the sauce, stir it well then close the pot with the lid, cook for ten minutes.  Fluff the rice to serve.


For special breakfast is kedgeree, prepare it with simple ingredients to whatever you would like to have, rice and eggs is always tasty, particularly for breakfast.

For daily cooking or even for special occasions, I up to a challenge, I cook without any recipe.
Friends understand my style of cooking.  Relax, and it goes with the flow, no restriction what you want to do in the kitchen.

The Bread and Butter or Olive Oil  Goes Very Well, but it is always good to have other complementary dishes to go with. Thus, other cooking takes place.


My kitchen is the sacred place not to worship but to create delicious dishes to serve the gods.
