Salad and Soup

What a glorious day, we have done a lot today, an outing, getting in touch with a dear friend and enjoying an afternoon in our garden, it's all good. Checking the vegetable garden, hoping that there are enough greens to make a salad for tonight's dinner.  Yes, some greens ready to harvest and they are excellent for a mixed vegetable salad.  Salad dinner we had. The greens from the garden added with green apple, endive that I have in the fridge made a healthy spring salad.  The salad dressing was simple, lime juice, mixed with olive oil and a little salt.
The greens: sorrels, asparagus, wild rocket, and sweet Dames Rocket.
Sage flower added for the garnish, and extra flavour.


Leafy Spring Salad
Well if you love salads as we do, it may give you the idea to prepare this salad for your family. However, you can adjust the type of greens as you like.
Serve the salad with anything you wish really, it is delicious with fried vegetables or cheese-egg pie.  It is so refreshing, you could enjoy with any fried or grilled meat, chicken and fish dishes.
It was a treat for us, the fresh asparagus from the garden was so tender, delicate and sweet.
Bakso
Springtime is not always fresh and crisp weather-wise, but occasionally could be a little nippy and you long to eat something warm such as soups.  Light soup is delicious, and mixed spring vegetable soup is my favourite.  But often I love to relive my childhood where I had this soup - Bakso on a rainy - coolish day.  It is a substantial soup, meatballs, noodles, vegetable in a light broth.  The recipe is on this blog, an older post, please type: bakso to search.

Fresh leeks are available on the market now, and at a reasonable price,  we have enough of them to cook for a variety of soups.  Creme Vichyssoise is on the menu.
Creme Vucgtssiuse

Creme Vichyssoise is served cold traditionally of course, but I love to have it hot.  I prepared and cooked the soup to be served warm and was appreciated.
Hot Creme Vichyssoise
A fancy name indeed, creme vichyssoise merely is a soup made out of leeks, potato, chicken stock a splash of white wine and cream/butter. Traditionally it is served cold, garnished with chives/parsley. I cooked the soup the other day and served hot with the garnishes.
The last baking was sourdough bread, the bread was enjoyed with the soup beautifully.

Home-Baked
Easily prepared salad often found at our table, on a tiring day, simply open a canned fish, and Tuna salad served with home-baked bread was delicious.

Busy is Better.  A full on the day could be tiring, but it is not dull.  The healthy salad we had and a Hot creme vichyssoise for the indulgence was the mark of a Sweet Spring Day.  Lovely!
