Using Egg White
Consomme, how to clarify the meat stock to have a clear broth. Adding soft beaten egg white into the stock. Straining the stock with care to get a good clear consomme.

Hard boiled in perfection. Using hard-boiled to garnish Gado-Gado (Javanese salad with peanut dressing)
Egg Roll - Telur Gulung
Egg and cabbage, cook the mixture as a giant omelette, fill in with prawns, roll it during the cooking process to make a large log. Sliced to serve.

Using Susy water pastry. Pastry filled with egg and cheese, roll and shape into a scroll, bake in the oven until golden brown.

Telur Pedas - Javanese Cooking (Hot spicy boiled eggs with turmeric)
A very simple curry - hot turmeric egg dish is one of the family favourites.
I take it for granted about the egg dish, as I often cook for my family and friends, it is a hot spicy dish, but very flavoursome, a pleasant change from cooking soft boiled egg served with toasted bread.
I cooked and served the dish for my daughter Jane and her friends one day, and they loved it. Only lately I learnt that her friend - Georgie has never eaten the egg to be prepared that way, it was a surprise for her. In fact, she told me herself last month when she was visiting us. Georgie said I never forget about the egg dish that you cooked for us, it was for the first time I ate yellow hot boiled egg she said with delight and enthusiasm.
The joy of cooking does not only bring people together but also shares and gives experience and taste of new flavours to others which will stay with them. It is very pleasing to be remembered.
