EASTER TIME



We celebrate Easter with family every year, but this year is different.  We are in isolation, social distancing takes place in our community due to the Coronavirus Pandemic. We do what we can as we have to stay in. However, the plan for Good Friday and Easter in terms of cooking was going to be done as plan.

We had home-baked one, especially we are in lockdown.  The buns should be done well, and we could eat them warm, freshly baked in our kitchen.

Similar ingredients I use as the recipe I have, but this time I introducing poolish to add to the mixture. I was hoping to have the bun, which is soft, light, and fluffy.  Indeed that what we had.

 No, I do not have the recipe of, I could share the pictures of the making though, it may give you ideas.
Preparation of the Hot Cross Buns

 After mixing and kneading lightly, the dough has to proof for two hours.  Depend on the ambience, if it is cold, not hot enough, the dough will rise slowly.  It took 2 hours for this dough.
The shaping 
Shape into small balls and place on the lined baking tin close one to another.  Proof for another 45 minutes.  Bake at 175 degrees fan-forced oven for 16 minutes, reduce to 160 degrees and continue baking for 13 minutes.

Dressed beautifully, and the family enjoyed it on Good Friday.  Served warm, cut in halves and spread with lots of butter.

The Preparations
Leaven and Poolish

Testing the leaven and the poolish for readiness, by putting a spoon of the leaven to water, and make sure it is floating.

The Brioche Dough
I organised all ingredients the night before, the next morning was the mixing of the dough, as I doubted about the yeast, I added the yeast in without hesitation.  Now, it's what happened, too much dry yeast I thought, and look at the dough, it becomes crazy so wild.  It all happened on Thursday, to be precise, it was Holy Thursday.  I took some of the mixtures of the brioche dough to bake a Cake, added glace cherries and dried fruit.  I call the cake-Corona Cake or Crown Cake.  It rose well and baked beautifully.  I don't know about the taste and the texture just yet.  The rest of the dough was sleeping in the fridge overnight for the next day baking.

A mid-day was the shaping and the baking for the brioches. I made a brioche crown, and it was baked beautifully, and I made brioche buns stuffed with meat ragu, and they absolutely delighted me, so golden brown and looked rustic.

We had the buns for supper that night, and the rest kept in the freezer.

Holy Saturday was busy and enjoyable, love to be especially now that everyone has to stay in. On the other hands, Rayner had to go out for the essential needs, it was not for along time, he's back quickly.
 Weekly Flowers


Cut flowers I do weekly, and always a big job to clean the big vases, the new flowers are ready for Sunday.  That's occupied a part of the day, by the evening everything was looking alright, we have beautiful colours, pretty flowers for the house.

Sunday morning was pleasant, we had an early cuppa coffee, before organising to get in touch with the children and family by messenger.
Of course, it's so important to dress the Brioche for Our Easter Crown this year, 2020.

EASTER SUNDAY
We had a good start, with morning coffee early, followed by our Easter Breakfast and Lunch.  Before Lunch, we got in touch with the children and the family.  It was so good to see them together via the messenger.

We saw and spoke to Melanie and family who lives in Brisbane, Jane and family who lives in New Zeland and Susan with her husband Tris, who lives in Melbourne.  We had a blessed morning on Easter, to see them was amazing.  Everyone was well and with a happy spirit of the occasion.

 A relaxed food preparation, the feast was spread out from morning to night, and every dish only takes a few minutes to do.  Delightful to us both; indeed, it was.

Today is Easter Monday, a peaceful day for me, resting well.  There is one more thing to do today, that is dressed the Corona Cake, cut to share with friends.  It is not simple, but doable during social distancing.  Cut, wrap securely and deliver to friends by leaving the cake bags in front of their front door.
