ETCETERA, ETCETERA. 2016



Often we ask for, how to make this? or how do I prepare this? Etc, Etc.


Simple Custard
1 tablespoon custard powder
1 tablespoon plain flour
1 large free-range egg
2 tablespoon caster sugar
1 cup milk
1 teaspoon vanilla essence
3 tablespoon whipped cream

Method
Heat the milk until hot enough.
Mix the custard powder, plain flour. sugar and egg to make a smooth mixture
Stir in half of the milk to the egg and flour mixture, mix together thoroughly
Cook over low heat, and add in the rest of the liquid, stir it well
Keep on stirring, until the mixture is thickened
Take it off the oven, add in the whipped cream, the vanilla essence and stir to combine.  Now the custard is very light and smooth.  Transfer onto a clean bowl, and cover with cling plastic wrap.
Let it cool, and keep in the refrigerator until you need it.

To make extra smooth, beat the cold custard to loosen up, and add some whipped cream, mix together until smooth.  It is excellent for filling choux pastry, like a cream puff.


Finger  Sandwiches

Finger Sandwiches
Get fresh sliced bread, and keep in the freezer until it hardens.
Prepare all the fillings and softened the butter, you could use margarine.
Start making the sandwiches now, spread the frozen bread with the softened butter, add with the filling, cover with the sliced bread.  Trim the sandwich straight away and cut into three pieces.  Place on the sandwich tray, garnish with herbs and wrap in cling plastic tightly.  Keep in refrigerator until serving time.  I prepare the sandwiches a few hours before, but you could do it overnight.

I have been visiting and looking in my file about my unpublished work. It is interesting. To continue and to fix the topics are challenging, but I have the time now, I found it is exciting.  It will be more new posts are coming.
