No Bread


Sandwiches
No car, no bread, and no good weather, what would you do for sandwiches.  It's impossible to walk downtown to get the fresh bread for lunch.  The last resource is the pantry, it serves me well to do home baking, as I got enough ingredients,  luckily!

Home bake crispy biscuit disks for fancy sandwiches I would do,  crispy wheat biscuits from the shops gave me the idea. I baked two disks which made four strips fancy sandwiches, thanks to the pantry.  It was easy enough to do the biscuits.

The sandwich looked pleasant, delicate and pretty,  it could have been better if I did not put too much salt in the dough. OH WELL!

The fillings were corn beef, dressed in mustard and mixed herbs mayonnaise. Soft free range scrambled eggs (thanks to Dianne for the fresh free range egg of your farm) and French sorrel.

The quantity ingredients of the biscuit disks: a cup full plain flour, 1 teaspoon level bicarbonate soda, 1 tablespoon oil, 1 tablespoon mayonnaise, 2 tablespoons water and 1 egg and a pinch of salt.  Mix all together to make a soft dough, knead lightly and roll the dough thinly.  Make two pieces, the same shape and size.
Bake into preheated oven 220 for 11 minutes.  The biscuits were baked well but slightly brittle.

and mixed herbs, mayonnaise



To make the sandwich
 Wrap in foil, refrigerate
When it is ready to serve, open it from the foil wrapper, 
cut into four (it was not easy, it cracked)
 Serving: serve with a salad
Home baked fancy crispy sandwich.


Did you know that you can use mayonnaise not just for salad dressing, or for dipping, but fat/protein ingredients for baking bread?

Overall they were tasty, crispy strips biscuits sandwiches, if I had to do it again, I may use self-raising flour as the dough would be crisper, also softer and lighter.  Maybe I will.

Is it a fancy, or at least a great sandwich?
