Fruity Gravy and Finger Sandwishes


Roast Dinner For Rayner.
Silky, fruity gravy to serve my family roast chicken was delicate and delightful.
Choose a family size chicken almost three kilogrammes.  Wash and patted to dry.  Loosen up the skin, and stuff with butter and herbs and rub with salt.  You will have beautiful raw chicken with golden butter and herb under the skin and ready for roasting.

Fruits and onion for the bed of the chicken during roasting are plum, grapes, dry apricot, onion and a tablespoon plain flour.  Place the bedding ingredients on a roasting pan, and put the chicken rest on top, add a cup of water and ready for baking.  Bake to roast, basting regularly with the juices.

Took me ninety-five minutes to cook the chicken, and twenty-five minutes to rest before serving.
The resting time is enough to do the garnishes and the gravy.

The perfect roasted chicken will read at 77-87 degrees C.
The gravy simply heats the juice, bring to simmer, stir and strain, if you wish to make a smooth gravy.

For the garnished, baked potato, sweet potato and Brussel sprouts.  Simply put these vegetables in the oven cook together with the chicken for the last fifty minutes of cooking.

You would have the tender, moist roast chicken served with fruity gravy fits for any celebration.

The flesh of the white meat was so perfect, tender, moist and juicy.  The cold meat is excellent for sandwich filling. None of the chicken breasts was wasted. It could be the best roast poultry I ever did.  I was and am very proud.

The sandwiches that I had in mind were finger sandwiches with the egg mayonnaise filling together with chicken and avocado. The flavours go very well along and fresh herbs to add for fragrance, and of course, the egg would taste better with saffron.

For Rayner, white bread was recommended by his doctor, but the brown bread was included to make the sandwiches.  They were beautiful sandwiches for morning tea with friends.
The fresh herbs added the freshness of the finger sandwiches and dressed the platters.


I share what was happening on the actual day of his birthday. The Sunday celebration was the best, we all got together with the children, grandchildren who are living in Melbourne.  Thank you, Melanie and Susan, for a pleasant day and lovely party.  That was good to see Jane via FaceTime. I think Rayner had a fabulous day.  Indeed I had an amazing mother's day.  Thank you all!

The birthday cake was a decadent chocolate cake with butter icing.  It's a small slice. It was suitable for Rayner; indeed, it was deliciously rich.

The fruity gravy dressed the roast deliciously, and the finger sandwiches were delightful.

If you wish to try to cook the chicken, I am afraid I don't have the recipe as such.  I believe that everyone knows how to roast chicken.  These are my tips, bake the prepared chicken (look at the pictures and information at the top) in hot oven at 200 degrees C for 30 minutes.  Reduce to 165 degrees and bake for one hour and basting with the juice regularly.  When it is cooked, transfer it to a warm dish to rest and cover with foil to keep warm.  Rest for 20 - 25 minutes before serving/carving.
