HOT AND RED


Rich, Red, Devilled Hot is this chicken dish.  It is based on Javanese cooking Ayam Pedas. 
Hot Red Devilled Chicken 
The process of cooking it's adapted to the equipment I have here, I baked in the oven instead of an open fire.  The proper name should be Ayam Pangang Pedas. (Spiced Hot Baked Chicken). What you do with the chicken: Wash the whole birds, dry it properly.  Marinade with 1 tablespoon salt, juice of a half lemon and kaffir lime leaves and keep in a bowl for a few hours.   Before baking, rub the red spices on all over the chicken and add some spices paste in the cavity.  Drizzle with oil and rub around the chicken and add dry chilli powder or mild Hungaria paprika.
The cooking and Preparation
The spices paste red chillies (a lot of them), red capsicum, cooked onion in oil, red tomato fresh garlic, salt, blend together to make a smooth paste/pure. Also, you need Hungarian paprika powder.
The Hot Spicy Paste
Chicken no 16-18.  Wash and Rub with Lemon juice and salt

Rub with spicy red paste all over the chicken and extra\red paste
put inside the cavity.  Place it on an ovenproof dish to cook without
any liquid or stock added.

Sprinkle generously with chilli powder/ (Hungarian paprika powder)
after rubbing the chicken with oil Cover the dish and bake for 1 hour
in a fan-forced oven  at 160 degrees C

Freshly baked red devilled chicken, taste the seasoning. You may need to add
a little sugar and salt. Cover the dish and put it back in the oven which is not on anymore but still
hot enough to continue cooking for 1 hour.

The Serving of the Dish
Transfer the hot chicken to a serving dish.  Heat up the red hot sauce and pour over the chicken, garnished with shredded fresh lime kaffir leaves.  To complement the meal, serve it with plain steamed white rice or yellow rice and vegetables or salads.

Red flowers, red is an intense colour, brave, and festive. There are times you could see red flowers everywhere in my place.  Love red!




Red Tomato, these red tomatoes are fresh and vibrantly red.  They are so wholesome, tomato salads are very refreshing, cooked tomatoes, as sauces or soups are rich not just in colour but they are good for our health.

Tomato sauce is red and braised for hours to make sourness of the tomato to be mellow but intense in flavour.  It is the base of other cooking, for braised meatballs, mixed in pasta with herbs, pizza and so forth.


Delicious and reddish when it is hot.  What is it?  Pizza!  Home-baked pizza for a treat to celebrate the home preserved olives.  It is red but not devils hot.




Red chilli is the devil, but it is friendly and has a lot of goodness. What could you do without chilli to cook hot and spicy food.
Habanero is Very Hot

Red fresh fruits have to have, it is Christmas.  The best fresh fruit to be served for the season to balance the richness of the festive food that all we have is definitely the red fruit. Gorgeous to be served in large platters.

To cook a hot and delicious dish,  the Hot Red Devilled Chicken is not hard to prepare, simply follow the pictures above.

The Recipe for the paste is not needed, improvise!
Remember it contains only hot chilli, cooked onion in oil, garlic and paprika (for extra red colour) and salt.  A lot of hot chillies as you like.
